If you aren’t making steak in your air fryer, you are seriously missing out. Juicy and tender with crispy edges, these Air Fryer Steak Bites are so simple and quick to whip up. And the Lemon Garlic Butter over top? Well that just seals the deal!

If steak bites are your thing, these Mediterranean Steak Bites are also a fan favorite. I am sure you could pop them in the air fryer as well.

Why these Air Fryer Steak Bites are so amazing:

  • Minimal prep time. While you can marinate the steak bites for a decent amount of time if desired, it is not necessary. All you need is about 10 minutes to cut the steak and toss it with all the other ingredients. The lemon garlic butter is ready in minutes as well. Easy, easy, easy!
  • Can be prepped in advance and marinated and then cooked up later. If you like to prep things ahead of time, toss the steak with the marinade early in the day and then pop the steak in to be air fried about 10 minutes or so before dinner.
  • The perfect compliment to many side dishes. Love steak and fries together? These Potato Wedges would be amazing with this steak recipe. Some Garlic Parmesan Mashed Potatoes and a simple Spring Green Salad.
  • 3 words: Lemon. Garlic. Butter. Steak was made to have a buttery rich sauce. Tossing these air fryer steak bites in the lemony butter sauce is perfection!

What you will need:

  • steak: I prefer top sirloin steak for these air fryer steak bites. You can use ribeye or New York strip if preferred. Sirloin is easy and affordable to I find it to be a great choice.
  • olive oil: extra virgin is my preference.
  • garlic: I find freshly minced to be best for this steak recipe. If you don’t have any on hand, you can use 1/2 to 1 teaspoon garlic powder.
  • soy sauce: low sodium is what I use to reduce the sodium content. For gluten free, opt for tamari.
  • Worcestershire sauce: the star ingredient in the marinade–don’t skip it if possible!
  • herbs: a combination of dried parsley, oregano and basil. Freshly chopped parsley is great to add over top.
  • butter: Unsalted or salted is fine, use what you prefer
  • lemon juice: freshly squeezed over the bottled stuff if possible.
  • salt/pepper: sea salt and freshly cracked pepper

What cut of steak is best for steak bites:

I prefer sirloin when making these air fried steak bites. They are tender and full of flavor but also on the affordable side as compared to other cuts of meat.

Other cuts you could easily use include Ribeye or New York Strip.

How to make the best air fryer steak bites:

Cut the steak into equal sized, bite sized pieces–approximately 1 1/2 inches. Toss the bites with the marinade ingredients, coating evenly.

You can allow it to chill anywhere from a few minutes to hours!

Preheat your air fryer to 400°F for about 5 minutes. Make sure its nice and hot!

Steack cubes in glass bowl with garlic, herbs and marinade ingredients.

Line the steak bites in a single, even layer in an oil sprayed air fryer basket. If your air fryer is too small, you can work in batches.

Marinated steak bites in air fryer basket.

Cook the steak for about 6-8 minutes, shaking the basket once halfway through, until cooked to desired doneness:

  • Medium Rare: 130°F
  • Medium: 140°F
  • Medium Well: 150°F

The steak will continue to cook slightly when you remove the basket so you can remove the basket when the bites reach just slightly under your preferred doneness.

While the steak bites are air frying, whisk together the lemon garlic butter ingredients. Pour over the steak when cooked and toss well to coat.

Serve and enjoy!

Recipe Tips:

  • Cut the steak bites into equal size pieces for best cooking. If the steak pieces are cut in different sizes, they will not cook as evenly. Thicker chunks will take longer so get them as similar as you can.
  • Air fryers tend to cook slightly differently across brands. Know your appliance and keep an eye on the steak as you get closer to the cook time as they can go from medium to medium well quicker than you may expect.
  • Don’t overcrowd your air fryer. If you have to work in batches, you can. Space the steak out so they aren’t touching if possible.

What to serve with these air fried steak bites:

Lots of options to serve with these air fried steak bites. You can toss them on a salad or serve them over potatoes, but lots of dishes beyond that!

What other sides am I missing??

Ridiculously easy to make and soooo good. Happy I made a double batch. Used coulotte steaks (top sirloin) I had in the freezer. Prepped at lunchtime to marinate a few hours. This will be a regular dinner for us! Thanks, Lorie!! ❤️
