A simple dinner or appetizer ready from start to finish in 20 minutes, this BBQ Chicken Flatbread is a great way to use up some leftover chicken in a delicious way. Chicken is tossed in ranch dressing to give an extra level of flavor unlike any BBQ chicken pizza around!

We are always looking for ways to use up leftover chicken. Whether it is grilled or rotisserie, there seems to be some hiding in the fridge every week.

Stuffed Poblano Peppers and Crunchy Pecan Chicken Salad are two favorites, but this BBQ Chicken Flatbread is 100% included in the top 3.

Why you will love this:

  • It uses up leftovers. I love working to use everything up in the kitchen before it goes bad. Being able to take one night’s dinner and turn it into another night’s dinner is my jam. So using up the chicken in the fridge is always a win.
  • It is so so simple to make. We are literally talking start to finish in under 30 minutes. That is quicker than delivery any day!
  • A really fun way to try new BBQ sauces. We did a big BBQ sauce summer on year. Tried at least 25 different versions. I am a classic Stubb’s Original kind of girl, but there were plenty others we loved.

Ingredients and Substitutions:

  • naan: I love using Naan for my flatbread base. It’s soft but still will crisp up on the edges. I often have it in the house too so that is an added bonus. If you want to make your own flatbread ahead of time, this flatbread recipe is a great one.
  • chicken: shredded cooked chicken is what I prefer. We often use leftover rotisserie chicken for this BBQ chicken flatbread recipe. I have been known also to use cubed grilled chicken or roasted chicken. Pick your pleasure–this is a clean out the fridge kind of thing!
  • BBQ sauce: Stubb’s and Sweet Baby Ray’s are two of the top in the U.S. if you are interested in the classics. You can go spicy or sticky sweet.
  • ranch dressing: When I know I am making this flatbread recipe, I like to shred the chicken and toss it with Ranch at the beginning of the day so it can soak up all the flavor.
  • mozzarella: I prefer freshly shredded, but let’s be honest, that is not always going to happen and that is fine!
  • onion: I love a little bit of onion–rounds this recipe out for sure.
  • cilantro: Freshly chopped and as much as you would like!

How to make it:

  1. Rub the naan or flatbread lightly with olive oil and bake about 3-4 minutes to prep. The BBQ chicken flatbread will be crispier especially around the edges if you do this!
  2. Remove from the oven and smother with BBQ sauce
  3. Toss the chicken with ranch dressing and then spread over top of the BBQ sauce
  4. Add the cheese evenly and sprinkle with chopped onion.
  5. Bake until cheese is melted and edges are crispy.
  6. Cover with freshly chopped cilantro and enjoy. Drizzle with extra BBQ sauce and ranch.

Notes and Tips:

  • Pre-baking the naan for just a few minutes will make the edges all the crispier. That is where the magic is in my opinion.
  • Toss some fresh minced garlic in with the chicken and ranch for some extra flavor. If your chicken is already seasoned, you more than likely won’t need it.
  • Whole what naan or a gluten free naan can be substituted in this BBQ chicken flatbread.

What to serve with this flatbread recipe:

Have this BBQ Ranch Chicken Flatbread with dinner or along with a full spread of apps. If you are having dinner, a nice salad would certainly pair well. I love this Chickpea Avocado Salad with almost any meal. This Strawberry Goat Cheese Salad is great as well–just skip the chicken!

Appetizers are best when in a big spread right? A few dips and some other finger foods will set the mood. Mango Avocado Salsa and maybe some Tomato Basil Skewers? Oh and you will definitely want to throw in some Pulled Pork Nachos as well. Sounding like a party now! Oh wait–don’t forget Mozzarella Stuffed Turkey Meatballs. Now its a party.

BBQ Ranch Chicken Flatbread

Ingredients 

  • 1 naan bread
  • 1 -2 tsp olive oil
  • 1/3 c bbq sauce
  • 3/4 to 1 c cooked chicken, shredded
  • 2 T ranch dressing, more for drizzle
  • 1 c mozzarella cheese
  • 2 T red onion
  • ¼ c chopped cilantro

Instructions 

  • Preheat oven to 400°F. Toss the shredded chicken with the ranch and set aside. Lightly brush the naan with olive oil and place on a sheet pan. Bake for about 3 minutes. This will help make the flatbread crispier.
  • Remove the naan from the oven and cover with BBQ sauce. Add the chicken on top evenly. Cover with the mozzarella and then top with diced onions.
  • Bake for 7-9 minutes or until cheese is melted and edges are crisp. Add freshly chopped cilantro and an extra drizzle of Ranch and BBQ sauce to serve.

    very good familt enjoyed it, used flat bread from Aldi and added in garlic and a littke cayane pepper. Will make this again.
