Coffee and breakfast all in one? These Vanilla Cold Brew Coffee Overnight Oats are the perfect breakfast combination! This recipe is simple, healthy and so delicious–all the fuel you need to start the day!

My Overnight Oats recipes are by far some of my most popular recipes, they are shared the most, I get the most questions about them and the most excitement with every new version, etc. And they are SO easy and SO convenient.
So adding a bit of coffee to them is a bonus all in itself. Breakfast and coffee all in one? Count me in!

Why you will love these:
- 5 minutes of prep. The reason I love easy overnight oats so much, is the simplicity of making them. Not even 5 minutes to whip them up and then breakfast is literally ready and waiting in the morning when you wake up.
- Perfect for meal prepping. If you like to plan your meals out in advance, these coffee overnight oats are perfect. You can make several at a time and have them in the fridge for the whole week.
- Perfect morning fuel! Hearty oats plus coffee. Need I say more??
I love using cold brew coffee for these coffee overnight oats, more of a concentrated coffee that is brewed overnight, or for about 12 hours to make a nice, less acidic, smooth brewed coffee. It’s the dreamiest.
For recipes like this, it’s even better because it brings the flavor without any extra bitterness. I added the vanilla to give a touch of flavor to the oats, you know for my vanilla latte lovers out there! And as always, toss in some superfoods like chia seeds or add some more protein powder, anything to give it your personal touch and then go!
Ingredients and Substitutions:
- rolled oats: regular or gluten free. I have made mine with quick oats before and they are not bad either. I do not like using steel cut oats. They are way too chewy but some people really love them.
- cold brew coffee: (see below for directions to easily make your own!) There are also lots of ready made cold brews you can find at the grocery these days! No cold brew? No problem! Sub with your favorite coffee, just make it a stronger brew for more flavor.
- milk: your choice! I like to add a vanilla almond milk for this coffee overnight oats recipe because it brings out more of the vanilla flavor. I will opt for whole milk if not.
- vanilla extract
- vanilla almond butter–I looooove vanilla almond butter. Makes it thick and creamy and even more vanilla. Don’t sweat it if you can’t find any. They can be pricey too. I love adding it, but have made these coffee overnight oats without the almond butter and they taste amazing still. Vanilla yogurt is also a great option to sub.
- maple syrup or honey: my faves but sweeten as you like to be honest
- chia seeds (optional)
- sea salt (optional but I love a dash of it!)
Want a protein boost in your overnight oats?
It’s as easy as adding a scoop of your favorite protein powder! I suggest a vanilla flavored powder to bring out the vanilla in these overnight oats.
You may need to add some extra liquid in the morning before serving as it could dry it out a touch. Other than that, you have an even more protein powered breakfast!
How To make cold brew coffee:
- Combine 1 1/2 c cold water and 1/3 c coarsely ground coffee in a sealed jar or container overnight.
- Strain twice in the morning.
- Combine equal parts cold brew and water or milk if drinking or add it straight to these Cold Brew Coffee Overnight Oats!
Notes and Tips:
- For a fun twist on these coffee overnight oats, you can certainly use a shot of espresso. Think vanilla latte oats!
- Fun add ins: chocolate chips, cacao nibs, coconut, a drizzle of caramel, hemp seeds, and so much more. Lots of fun ways to bump up the flavor all the more.
- I used Weck Jars in these images and get asked a lot about them. They should work for this recipe, but they are a tad bit small so you may want to use something a bit larger. I think they are so adorable though!

Vanilla Cold Brew Overnight Oats
Ingredients
- 1/2 c rolled oats, regular or gluten free
- 2 T cold brewed coffee
- 1/2 c milk of choice
- 1 tsp vanilla extract
- 1-2 tsp vanilla almond butter
- 2 tsp pure maple syrup or honey
- 1 tsp chia seeds
- Dash of sea salt
Instructions
- Add all ingredients to a bowl or jar that can be sealed shut.
- Stir well to combine and cover in the refrigerator overnight.
- Serve hot or cold in the morning. Garnish with cacao nibs or your favorite topping!
Notes

I’ve been making these for a few weeks now. I’m breastfeeding and everyone says “eat oatmeal!” I tried a few recipes from different bloggers but none compared to this one. I line up four mason jars, add everything, give each a stir, and seal with a plastic mason jar lid. First time I made it my husband was like …woah. This is like REALLY good. Expected good but… woah. It was very sweet.
I make this one once a week and two days later make a different one from your site. Currently loving the blueberry muffin overnight oats and the cinnamon roll overnight oats.

This always sounds good to and I want it, but I really hate overnight oats because of the texture of the oats. So I’m thinking about just blending the oats and making it. Just to see how it turns out..
