These simple Parmesan Crusted Potatoes are a perfect side dish the whole family will love. Crispy, roasted potatoes tossed in the perfect amount of seasoning and coated in parmesan and only about 10 minutes to prep. These will be on the weekly rotation for sure!

These simple and delicious roasted Parmesan Crusted Potatoes were inspired by my two favorite sheet pan dinners. The potatoes in this Parmesan Steak and Parmesan Crusted Chicken dinners always get rave reviews. So it makes sense that I have an option for you to just make the potatoes!

You will love these crispy parmesan potatoes and they pair well with so many main dishes! A great side dish to have on rotation for sure!

Why You Will Love These Parmesan Crusted Potatoes:

  • Only 10 minutes to prep. Simple ingredients and such an easy recipe! Cut up the potatoes, toss everything together, add to the pan and sprinkle with more parmesan. Then bake. It really is so simple, and worth a few minutes of prep!
  • They taste amazing. These crispy parmesan crusted potatoes are so delicious and pack in so much flavor. The combination of the parmesan, garlic and Italian seasoning make for the best potatoes!
  • Easy to make as part of meal prep. You can prep these oven-roasted potatoes early in the week and have them ready to add to the said of your favorite main dish. You can also portion them out with some meat and veggies and have grab and go meals all week!

What Potatoes are Best For Roasting?

Not every potato roasts the same. Too much wax or too much starch can cause the texture of the potatoes to go the wrong direction. Yukon golds are the ideal roasting potato as they are not too starchy, and not too waxy.

They will hold up well when roasted and not become too mushy but still have a nice, rich and smooth texture. If possible, opt for Yukon gold potatoes when making these parmesan crusted roasted potatoes.

You can get petite or baby gold potatoes and those would work as well. Red potatoes are another option.

If you can’t get a hold of Yukons or red potatoes, russet potatoes will make another great option for roasting!

Recipe Ingredients:

  • potatoes: as noted, Yukon gold is the ideal potato for this recipe. They are typically relatively uniform in size so that helps as well. About 3 pounds is what you will need which can be anywhere from about 6-8 potatoes, give or take. You can get gold petite or baby potatoes and those would work as well. Red potatoes are another option.
  • olive oil: extra virgin olive oil is ideal, but if you have a preferred cooking oil like avocado oil that is fine too. Just make sure you like the flavor of the oil! Melted butter works great too!
  • parmesan: freshly grated is my personal preference, however, you can use parmesan that is already grated. Grated is best because it will coat the potatoes better than any other variation.
  • garlic: fresh garlic, minced is ideal for optimal flavor. If you don’t have fresh, use about 1/2 to 3/4 teaspoon of garlic powder instead.
  • seasoning: salt and pepper, you can vary to your own preferences as well as Italian seasoning and paprika. A pinch of smoked paprika can add a fun twist to these parmesan roasted potatoes as well!

Step-By-Step Instructions:

  • Chop the potatoes into bite sized pieces, about 1 1/2 inches. Toss them with olive oil, seasonings, garlic and 1/2 cup of the parmesan. Make sure all of the potatoes are evenly coated.
  • Transfer to a 9×13 inch lightly greased with cooking spray or a parchment paper lined baking sheet. Sprinkle with remaining parmesan. Bake for about 25-30 minutes or until crisp and golden brown. Toss the potatoes one time halfway through cooking if desired.
  • You can broil on high for the last 2 minutes for even crispier potatoes. Allow to cool for several minutes before serving. A nice dollop of sour cream, chopped fresh herbs and extra parmesan are great to serve these potatoes with!

Tips For Extra Crispy Parmesan Crusted Potatoes:

  • If you like your potatoes extra crispy, use a large baking sheet. The less the potatoes touch, the more crispy they will get. If you like extra crispiness, spread them out on a large sheet pan in a single layer and make sure none of the potatoes touch or overlap.
  • For best results, cut potatoes into equal size pieces. To make sure these cook evenly, make sure the size of the potatoes are the same when chopping. This will keep you from having some burn and others still slightly raw in the middle.
  • Soak potatoes first to get extra crispy potatoes. One trick for extra crispy roasted potatoes is to cut them up and then let them sit for about 30 minutes in a cold water. Pat them dry after soaking and then add them to the recipe. This will help remove any excess starch from the potatoes and get the crisp level up!

Possible Add-Ins:

  • lemon zest
  • bacon
  • onion or onion powder
  • other cheeses
  • fresh herbs
  • a dash of ranch dressing seasoning

Storage Instructions:

To store these potatoes, place in an airtight container and refrigerate leftovers for up to 5 days. You can reheat them in the oven, air fryer or microwave.

To freeze, allow to cool completely and then transfer to an airtight, freezer safe container. These parmesan potatoes will keep in the freezer for about 3 months.

What to Serve These Parmesan Crusted Potatoes With:

The beauty of this parmesan potato recipe is that it pairs very will with a variety of dishes. They certainly go well with a classic juicy steak from the grill.

  • Preheat oven to 425°F.
