Parmesan Crusted Potatoes

These simple Parmesan Crusted Potatoes are a perfect side dish the whole family will love. Crispy, roasted potatoes tossed in the perfect amount of seasoning and coated in parmesan and only about 10 minutes to prep. These will be on the weekly rotation for sure!

  • Preheat oven to 425°F.
  • Chop the potatoes into bite sized pieces, about 1 1/2 inches. Toss them with olive oil, seasonings, garlic and 1/2 cup of the parmesan. Make sure all of the potatoes are evenly coated. Transfer to a lightly greased 9x13 inch baking pan or a parchment paper lined baking sheet. Sprinkle with remaining parmesan.
  • Bake for about 25-30 minutes or until crisp and golden brown. Toss once halfway through if desired. (*You can broil on high for the last 2 minutes for even crispier potatoes.)
  • Allow to cool several minutes before serving.

Notes

  • If you like your potatoes extra crispy, use a large baking sheet. The less the potatoes touch, the more crispy they will get. If you like extra crispiness, spread them out on a large sheet pan in a single layer and make sure none of the potatoes touch or overlap.
  • Cut potatoes into equal size pieces. To make sure these cook evenly, make sure the size of the potatoes are the same when chopping. This will keep you from having some burn and others still slightly raw in the middle.
  • Soak potatoes first to get extra crispy potatoes. One trick for extra crispy roasted potatoes is to cut them up and then let them sit for about 30 minutes in a cold water. Pat them dry after soaking and then add them to the recipe. This will help remove any excess starch from the potatoes and get the crisp level up!
