Overnight oats are by far the most popular recipes here–banana bread oats, blueberry muffin flavor, and even pumpkin pie overnight oats! I seriously live on them and so should you!

Why You Will Love These Coconut Overnight Oats:

  • They are so simple to prep. These coconut overnight oats are just a matter of stirring everything together. You can make quite a few servings in no time and then have them in the fridge ready to go when you are.
  • You can meal prep them for the week. Make about 4-5 servings at once and then you are set for the week if you love to meal prep.
  • Packed with the good stuff. Chia seeds, oats, coconut–plenty of hearty ingredients to really keep you fueled for the day.
  • Coconut cream pie without the baking! Ok, so they aren’t quite a slice of pie, but the coconut flavor you will love in the morning when you wake up. And you didn’t even have to turn on the oven!

Ingredients and substitutions:

  • oats: rolled oats are ideal. Some like steel cut oatmeal but I find those oats to be too chewy.
  • milk: I like to use a coconut milk beverage (not the canned kind) in these coconut cream overnight oats. It gives even more coconut flavor. If you have a coconut cream, you can add a touch of that too in order to make this oatmeal all the creamier.
  • coconut: unsweetened shredded coconut. You can lightly toast them if preferred.
  • coconut yogurt: A coconut flavored yogurt or a yogurt made with coconut milk for dairy free. I find the yogurt gives the texture extra creaminess as well as the best coconut flavor. I use Greek Yogurt in some overnight oats recipes, but the coconut flavor is so good!
  • chia seeds: These just give a bit more nutritional value to the coconut oats. Totally optional, so if you don’t have any, don’t worry!
  • sweetener: I like maple syrup in my overnight oats. Depending on how sweet your coconut yogurt is, you will want to adjust. I like to add the sweetener often just as I am serving the oatmeal.
  • vanilla: you could add a touch of coconut extract as well to the mix. I prefer the vanilla only but have tried it with a touch of coconut as well!

How to make these Coconut Oats:

Add all the ingredients to a jar or bowl that can easily be sealed. Stir well to combine. Cover and chill for at least 4 hours.

When serving, you can add an extra splash of milk if the oats have thickened too much.

Recipe Tips and Notes:

  • When I originally published this recipe, I used coconut butter in place of the yogurt. However, coconut butter is not the easiest to access and can be tricky to use when it hardens. If you have coconut butter, feel free to add a spoonful to your coconut overnight oats!
  • Easily make this recipe gluten free and dairy free. Make sure your rolled oats say “certified gluten free” and use dairy free yogurt and milk for vegan/dairy free. There are a lot of options out there these days!
  • Possible add ins: sliced almonds, raisins, fresh berries, chocolate chips, flaxmeal, protein powder, or even some cocoa powder. Make these your own!

FAQs

How long do overnight oats last?

I typically make 3 or so days worth at a time. 3-5 days is the range that they will last and certain ingredients in different flavors impact this. Just keep fruit out of your oats until serving and that should typically help.

What kind of oats should I use?

I prefer rolled oats in mine. I find that they soak up the milk perfectly and are nice and soft after sitting overnight. I have seen others suggest steel cut oats for their overnight oats recipe but that is NOT for me. They are too hard and chewy for me. Do you have to make overnight oats in a jar?

When the overnight oats trend hit, it was all the rage to scoop your breakfast out of a ball jar. Heck, I still do. But don’t go out and buy cute little jars just yet. If you have a bowl that you can seal, then you are in perfect shape. Don’t feel like you have to buy anything extra to make your oatmeal in, bowls can be great as well. I have seen lots of people use the end of a peanut butter jar–that would be perfect for these Chocolate Peanut Butter Overnight Oats!

Can you warm up overnight oats?

Yes, Yes, Yes! I have had readers comment or reach out saying they don’t want to eat cold oats. No one says you have to–promise! Pop them in the microwave in the morning and you are all set! Love them chilled? Great, you just get to eat them about a minute sooner!

Instructions 

  • Combine all ingredients in a bowl or jar that can be sealed tight.
  • Stir well to combine.
  • Seal jar and refrigerate over night or at least 4 hours.
  • Serve warm or cold and with desired garnishes such as toasted coconut flakes, fresh berries or even sliced almonds!

    i made this last night and the coconut butter is hard while eating it for breakfast the next day. Any tips to avoid this?

      Hi! You can add the coconut butter in the morning. I imagine somehow it all gathered at the bottom?? Maybe try whisking the ingredients so that it may break down the butter more. Let me know if that helps!

    Two questions:
    1) Do you use sweetened or unsweetened shredded coconut?
    2) For the homemade coconut butter- did you add anything? Mine never fully came together and I let my food processor run for 15 minutes. It looked the same at 10 as it did at 15, just small clumps of coconut but never binding together.
