These golden brown, fluffy No Yeast Dinner Rolls are going to be a new household staple. Only 10 minutes to prep, a handful of ingredients and no kneading required! The secret ingredient is Greek yogurt and it gives these rolls the perfect fluffy texture with a boost of protein as well!

Ever had a major craving for homemade dinner rolls only to find out you don’t have any yeast? I sure have. That is why I developed this yeast free dinner roll recipe!

I adapted my Easy Cinnamon Raisin Bagel Recipe that uses a combination of flour and Greek yogurt to make an amazing soft and chewy bagel.

While these no yeast dinner rolls are a touch denser than traditional rolls, I find them to be delicious fluffy rolls that we smother in a garlic butter and make for the perfect option when we are in a pinch! Hope you love them too!

Why You Will Love These No Yeast Dinner Rolls:

  • They are so easy to make. Simple ingredients that include pantry staples in our house make these so easy to make very last minute. I have wanted to make dinner rolls and realized I had no yeast before so these are always perfect in a pinch!
  • No proofing, kneading and more. Using Greek yogurt and flour, you literally just have to mix, pull the dough together and form round balls of dough. There is no need to let dough rise, no kneading or any other special steps to this recipe.
  • Freezer friendly. Being able to store extra rolls in the freezer for when you need a few to warm up is a great option. Fresh bread of any kind doesn’t last quite long so freezing these easy dinner rolls will extend the time you can eat these by quite a lot.
  • Easy to vary! You can top these rolls with poppy seeds, plain melted butter, stir in fresh herbs, and so much more. You can certainly go beyond basic in this recipe!

Recipe Ingredients:

  • flour: regular all purpose flour is what we used to make these dinner rolls. I have not yet tested with a gluten free flour, but usually have a lot of luck with all purpose 1:1 baking flour such as King Arthurs and Bob’s Red Mill.
  • baking powder: the biggest thing you want to make sure of is that it your baking powder is FRESH. Old or expired baking powder can have a really negative impact on these rolls and how much they rise so use fresh!
  • sugar: a touch of regular white sugar. This is a normal ingredient in most dinner roll recipes.
  • sea salt: you can use table salt but we prefer sea salt
  • Greek yogurt: Make sure to use PLAIN Greek yogurt. I used Chobani whole milk plain Greek yogurt when testing this recipe. The whole milk yogurt works great. Faje 5% Greek yogurt is another great option. You can use a lower fat Greek yogurt with success, but flavor and texture will vary slightly. Regular yogurt will not work in this recipe.
  • egg: one egg is used to brush the tops of rolls for an egg wash to give the rolls that glistening golden brown color. You can use whole milk, cream or even butter in place of egg if needed.
  • garlic herb butter: we always finish these rolls off with a combination of melted butter, freshly chopped parsley and minced garlic. You can use plain butter and some sea salt or poppy seeds or another topping as desired.

Step-By-Step Instructions:

  • Whisk together dry ingredients. In a medium bowl, whisk flour, salt, baking powder and sugar to combine.
  • Add Greek yogurt. Add the Greek yogurt and stir to combine using a wooden spoon. This mixture will not be a smooth dough, but in pieces and that is ok. Try not to over mix or work the dough.
  • Transfer the dinner roll dough to a lightly floured surface. Pull the mixture together into a ball. You may need to work it a bit to smooth it and that is fine, you can lightly knead it to help pull it all into a ball.
  • If it seems overly sticky, you can add more flour, about 1 or 2 tablespoons at a time. Then press it into a thick round disk.
  • Cut the dough into 8 equal pieces.
  • Take each section of dough and roll into a ball. You can work it a bit in your hands to remove any cracks but the dough doesn’t necessarily become super smooth like a yeast dinner roll will.
  • Line the balls on a parchment paper lined sheet pan. Leave a bit of space between each roll.
  • Whisk the egg well in a small bowl and brush each dinner roll. Make sure to get all of the sides of the rolls.
  • Bake in preheated oven for about 24-28 minutes. Check the rolls at the 20 minute mark and then every couple minutes after. I use one roll as a tester and pull it apart to make sure the inside of the roll is fully cooked.
  • The rolls will be a nice golden brown on top and on the bottom. Try not to over bake these so as not to dry them out.
  • Cool for a few minutes and then whisk the garlic butter ingredients together. Brush the top of each roll with the butter mixture. You can top with a touch of flakey sea salt and extra chopped parsley if desired.

Recipe Tips

  • Make sure not to over bake your rolls. As with any rolls, you don’t want to over bake these dinner rolls. The texture is more dense than a traditional dinner roll and the outside is has more chew so you really want to bake them just right.
  • Serve these with a smear of butter for even more buttery goodness! A touch of butter on the inside of each half is sooooo good.
  • Spoon and level flour for best results. Stir the flour to aerate and then spoon it into the measuring cup and use a knife to level it. You don’t want to add too much flour and dry out your rolls.

Storage:

Store these yeast free dinner rolls in an airtight container at room temperature for about 2-3 days. You can pop them in the microwave for about 10-20 seconds to warm and soften them back up slightly before serving.

To freeze, allow them to cool completely before transferring to a freezer safe container. Freeze for up to 3 months.

Ways To Vary This recipe:

  • In one round of testing this recipe, I added about 3 tablespoons of melted butter to the dough mixture when adding the Greek yogurt. This gave a buttery flavor to the rolls but they turned out much more biscuit like. If that is what you would love, go for it!
  • Add garlic and herbs to the dough. You can chop up some fresh rosemary, thyme, parsley and more and also add in some minced garlic to the dough for more flavor.
  • Add some cheese! Stir in some freshly shredded cheddar for a cheesy dinner roll.
