No Yeast Dinner Rolls

These golden brown, fluffy No Yeast Dinner Rolls are going to be a new household staple. Only 10 minutes to prep, a handful of ingredients and no kneading required! The secret ingredient is Greek yogurt and it gives these rolls the perfect fluffy texture with a boost of protein as well!

Instructions

  • Preheat oven to 350°F.
  • In a medium bowl, whisk flour, salt, baking powder and sugar to combine. Add the Greek yogurt and stir to combine using a wooden spoon. This mixture will not be a smooth dough, but in pieces and that is ok. Try not to over mix or work the dough.
  • Transfer the dinner roll dough to a lightly floured surface. Pull the mixture together into a ball. You may need to work it a bit to smooth it and that is fine, you can lightly knead it to help pull it all into a ball. If it seems overly sticky, you can add more flour, about 1 or 2 tablespoons at a time. Then press it into a thick round disk.
  • Cut the dough into 8 equal pieces and roll each into a ball. You can work it a bit in your hands to remove any cracks.
  • Line the balls on a parchment paper lined sheet pan spacing the rolls out slightly. Whisk the egg well in a small bowl and brush each dinner roll.
  • Bake in preheated oven for about 24-28 minutes. Check the rolls at the 20 minute mark and then every couple minutes after. I use one roll as a tester and pull it apart to make sure the inside of the roll is fully cooked.
  • The rolls will be a nice golden brown on top and on the bottom. Try not to over bake these so as not to dry them out. Cool for a few minutes and then whisk the garlic butter ingredients together. Brush the top of each roll with the butter mixture. You can top with a touch of flakey sea salt and extra chopped parsley if desired.

Notes

Storage: Store these yeast free dinner rolls in an airtight container at room temperature for about 2-3 days. You can pop them in the microwave for about 10-20 seconds to warm and soften them back up slightly before serving.
To freeze, allow them to cool completely before transferring to a freezer safe container. Freeze for up to 3 months.
Make sure not to over bake your rolls. As with any rolls, you don't want to over bake these dinner rolls. The texture is more dense than a traditional dinner roll and the outside is has more chew so you really want to bake them just right.
Serve these with a smear of butter for even more buttery goodness! A touch of butter on the inside of each half is sooooo good.
Spoon and level flour for best results. Stir the flour to aerate and then spoon it into the measuring cup and use a knife to level it. You don't want to add too much flour and dry out your rolls.
