Strawberry Season is Here!

Can’t contain my excitement–all things strawberry are on my summer list. And these Strawberry Cheesecake Overnight Oats are on the top of the breakfast rotation currently.

There is nothing like a hearty bowl of oats in the morning, but there is NOTHING like a cheesecake inspired bowl of overnight oats, am I right? Ooooh, I am right. This Peanut Butter Cheesecake Overnight Oatmeal recipe is another great option if you love all things cream cheese!

Why We Love these Strawberry Cheesecake Overnight Oats

I love my classic overnight oatmeal recipes, but honestly, I do love to change them up and even more so, love for them to essentially taste like dessert. Sometimes I love to have them as a simple snack, so a little sweet treat is the way to go then!

These strawberry cheesecake oats:

  • are prepped ahead of time–great for meal prep
  • are ready when you wake up.
  • only take about 5 minutes to prep–so you can have several breakfasts for the week done in no time!
  • are so simple to vary: add protein powder, make them gluten free, vary the fruit and more!
  • THEY TASTE LIKE CHEESECAKE!

Ingredients and Substitutions

  1. Rolled Oats: regular or gluten free will both work great. Some people like steel cut oats in their overnight oatmeal, but I find them too chewy. You can certainly use them, but I prefer rolled oats, or even quick cook oats if that is what you have.
  2. Strawberries: Fresh strawberries or frozen will work. If you use frozen strawberries and don’t plan on warming your strawberry cheesecake overnight oats up in the morning, you will want to thaw them before adding them when preparing your oatmeal.
  3. Cream Cheese: I use the whipped cream cheese in the tub for easier stirring–you can use cream cheese form a block, just soften it first. For more protein, you could use equal parts cream cheese and Greek yogurt or even cottage cheese instead of all cream cheese. Keeping this one dairy free? Lots of dairy free cream cheese options out there these days!
  4. Milk: Your favorite regular or dairy free milk should be great! We love to use unsweetened almond milk (vanilla typically) or whole milk–we typically have both on hand. But any other milk should work–soy, oat, coconut milk, skim, etc. Choose your favorite.
  5. Maple Syrup: This is my favorite sweetener, but feel free to add your sweetener of choice instead. Feel free to use honey, a bit of brown sugar, regular sugar, etc.
  6. optional: chia seeds, and crushed graham crackers–both add a bit to the recipe, but you can defintiely enjoy this overnght oatmeal recipe without them

Step-By-Step Instructions

Step 1: Mash or muddle the strawberries with a teaspoon of maple syrup.

Cup with milk, chia seeds, rolled oats, cream cheese and other ingredients.

Step 2: Add remaining ingredients to the same bowl or jar.

Step 3: Stir to combine. You can adjust the sweetness or the flavor as desired, it may be better to do so when serving. Feel free to toss in any add-ins at this time.

Step 4: Seal and chill for at least 4 hours but overnight is ideal. Enjoy when ready, chilled or warmed up.

Recipe Tips

You can eat these strawberry cheesecake overnight oats hot or cold. Warm them up in the morning and toss some extra milk in if they seem a bit too thick after warming. I typically microwave them for about 45 seconds to one minute or so.

No strawberries? Use jam. You can use some strawberry jam instead of fresh or frozen strawberries if you are all out of berries.

Storage

These overnight oats will store well in a sealed airtight container for about 4-5 days. They will have the best texture if eaten within the first 2-3 days. The mixture will turn a bit more pink each day. If you want these to last for a full 5 days, you can wait to add the strawberries before serving.

Give them a stir when you are ready to eat and add an extra splash of milk if they seem too thick or have dried up a touch. Heat in the microwave or eat them cold!

Recipe Variations

  • Add chocolate chips–because all things are better with chocolate.
  • Make your strawberries into a compote before mixing in. Simmer strawberries with a pinch of sweetener and a squeeze of lemon juice on your stove top for about 20-30 minutes. Top your oats in the morning  with extra!
  • Try another berry–blueberries are amazing to sub for the strawberry cheesecake overnight oats, but raspberries or blackberries would be amazing as well!
  • Make these high protein: Add a couple of tablespoons of vanilla or Strawberry greek yogurt. Add a scoop of vanilla protein powder. Or maybe you can find a strawberry protein powder??

Strawberry Cheesecake Overnight Oats

Ingredients 

  • 5-7 strawberries, stems removed
  • 2 tsp maple syrup, divided
  • ½ cup rolled oats, regular or gluten free
  • ½ cup milk of choice
  • 2 Tbsp cream cheese, softened, (spreadable or whipped is best)
  • ½ tsp vanilla extract
  • pinch of sea salt
  • 1 tsp chia seeds (optional)
  • optional: a sprinkle of crushed graham crackers

Instructions

    My hubby loved this strawberry cheesecake overnight oats recipe, In the morning he heats about half a jar of oatmeal with some milk. I think I will try and make it with blueberries the next time to change it up.
    Note: We did not add any salt.
    Thank you help to provide a more healthy alternative to boring cereals in the morning.
