Strawberry Cheesecake Overnight Oats

Cheesecake for breakfast? Of course! These strawberry cheesecake overnight oats are a simple and delicious breakfast that can be prepped in just 5 minutes and are ready when you wake up. Fresh berries, cream cheese and a hint of maple in this hearty oatmeal will have you excited to wake up!

Ingredients

  • 5-7 strawberries stems removed
  • 2 tsp maple syrup divided
  • ½ cup rolled oats regular or gluten free
  • ½ cup milk of choice
  • 2 Tbsp cream cheese, softened (spreadable or whipped is best)
  • ½ tsp vanilla extract
  • pinch of sea salt
  • 1 tsp chia seeds (optional)
  • optional: a sprinkle of crushed graham crackers

Instructions

  • In the bottom of a jar or small bowl, mash or muddle the strawberries and 1 tsp maple syrup.
  • Add all other ingredients into the jar or bowl and stir well to combine.  Cover and refrigerate for at least 4 hours, overnight is ideal.
  • Give them a stir when you are ready to eat and add an extra splash of milk if they seem too thick or have dried up a touch. Heat in the microwave or eat them cold! Stir in some strawberry jam or add some sliced strawberries and crushed graham crackers before serving.

Notes

You can eat these strawberry cheesecake overnight oats hot or cold. Warm them up in the morning and toss some extra milk in if they seem a bit too thick after warming. I typically microwave them for about 45 seconds to one minute or so.
Storage instructions: These overnight oats will store well in a sealed airtight container for about 4-5 days. They will have the best texture if eaten within the first 2-3 days. The mixture will turn a bit more pink each day. If you want these to last for a full 5 days, you can wait to add the strawberries before serving.
