I know, I know. It’s true. But I DO love pumpkin pie everything! And this Pumpkin Pie Overnight Oats recipe is essentially on repeat from the second fall weather arrives a perfect cozy fall recipe.

Real pumpkin, hearty oatmeal, warm spices, and crunchy pecans all come together in this 5 minute recipe that is literally ready and waiting for you when you wake up in the morning. Doesn’t get any better!

Why You Will Love This Pumpkin Pie Overnight Oats Recipe:

  • Only 5 minutes to prep. The quickest breakfast prep around aside from pouring a bowl of cereal. Take a few minutes at night to whip them up and then it’s ready in the morning for you!
  • Simple ingredients. A handful of pantry staples is pretty much all you need, but the recipe does not taste simple or boring by any means!
  • Great for meal prep. You can make several of these all at once and then literally have your morning meals ready for the week. If you are a big meal prepper on Sundays, add these to the list for sure!
  • Cozy fall flavor! Pumpkin season never disappoints! Adding some fall flavor to this simple breakfast recipe with the combo of the pumpkin, warm spices, maple syrup and more make the perfect breakfast for a crisp cool morning.

Recipe Ingredients:

  • oats: rolled oats, also called old fashioned oats are best in overnight oatmeal recipes. For gluten free, just make sure the package says “certified gluten free.” Some people like steel cut oats for their overnight oats but these are not recommended.
  • milk: use your favorite milk, regular or dairy free. We love vanilla almond milk or whole milk because we always have them on hand. But oat milk, soy milk, skim milk, and more will still be great.
  • pumpkin: if using a can, make sure you get pumpkin purée versus pumpkin pie filling. The pumpkin pie filling is already spiced and sweetened so that will be a bit too much on top of the other ingredients.
  • chia seeds: these are optional. I like to add them for a bit more nutrition but if you don’t have them, don’t worry.
  • sweetener: real maple syrup is my sweetener of choice. You could use a different sweetener if preferred. Brown sugar is great! You can wait until serving to sweeten if preferred and add to taste.
  • fall spices: The recipe calls for pumpkin pie spice, but I like to use a combination of cinnamon and pumpkin pie spice more often. I find that pre-made pumpkin pie spices never have enough cinnamon so I tend to add a touch of cinnamon on top of the pumpkin spice.
  • vanilla: a touch of vanilla extract to round out the flavor
  • pecans: optional, but I love the added crunch and nuttiness

Recipe Tips

  • You can eat overnight oatmeal hot or cold. I love eating my pumpkin overnight oats warmed up in the morning. Some people prefer them cold. Either is fine!
  • Adjust to meet your own dietary needs. You can make these gluten free by using gluten free rolled oats. You can use your favorite plant-based milk free milk to make these as well, I love using unsweetened vanilla almond milk. Use what you have or what you love!
  • Add more milk before serving in the morning if needed. If the oatmeal is too thick when you grab it from the fridge in the morning, add an extra splash of milk before serving.

Storage:

You do not have to make these pumpkin overnight oats in any sort of special mason jars or anything. As long as it is an airtight container, you are good to go.

You can prepare and store these oats for up to 5 days in the refrigerator. You may need to add an extra splash of milk before eating, but other than that, you are set for a perfect fall breakfast ready when you are!

Instructions 

  • Combine all ingredients in a bowl or jar that can be sealed.
  • Stir well to combine. Chill in the refrigerator overnight or at least for 4 hours.
  • Eat these warmed up or cold if you are on the go!
