Why We Love These Lemonade ICe cream Sandwiches

Quick and easy summer treats can really just win the season. These super simple ice cream like treats are just so delicious and refreshing. While I get they are not actually made with ice cream, they are a dessert recipe that are like nothing you have ever experienced!

These lemon ice cream sandwiches:

  • only require 4 ingredients and less than 10 minutes to prep
  • are so refreshing with the perfect pop of citrus flavor
  • are very kid friendly (and adult friendly of course!)
  • can easily be varied
  • are a no bake recipe–no need to turn on the oven!

Ingredient Notes

  • cool whip: you can use any kind of cool whip or tub of whipped topping. Do not use the canned whipped cream as that will not work.
  • If you don’t have lemonade, you can use some more lemon zest, or a touch of lemon extract

Ways To Vary This Recipe

  • roll them in sprinkles: you can roll the ice cream sandwiches after they have been frozen in sprinkles. Yellow sprinkles would look amazing!
  • roll them in another ingredient: roll them in crushed pistachios, coconut, etc.
  • possible mix-ins: stir in some white chocolate chips, some blueberry jam, a touch of ginger and more
  • use something other than the graham crackers: you can make smaller, individual ice cream sandwiches with sugar cookies, ginger snaps, chewy lemon cookies, and more!

Step-By-Step Instructions

Step 1: Add the lemonade mix and zest to a thawed tub of cool whip and stir until fully combined. You can adjust the lemon flavor to taste.

Step 2: Line 4-5 graham cracker sheets on a small parchment paper lined sheet pan or flat tray. Spoon the lemon whipped topping over the grahams.

Step 3: Spread the lemonade mixture evenly over top of the grahams.

Step 4: Press the other grahams over top and gently press. Pop them in the freezer and freeze for at least 4 hours but I prefer overnight. Cut into squares and enjoy!

Recipe Tips

These are the easiest to cut when they are pretty much solid and fully frozen. A sharp knife will easily cut them in half, if that is not the case for you, let them freeze longer. I like to freeze them overnight if possible. If not, it just gets a bit messy, which can be ok too!

You could use some lemon pudding mix instead if you don’t have any lemonade. It should work just fine and can be adjusted to taste as well.

You could make this a protein treat if you wanted! Use some lemon protein powder instead of the lemonade mix!

Storage

Store these lemon sandwiches in an airtight container for about 2-3 weeks in the freezer. After that time, the graham crackers can become a bit too soft. You can wrap these individually in plastic wrap if preferred.

  • 1 tub cool whip (8 oz.)
  • 2 Tbsp powdered lemonade mix
  • 2 tsp lemon zest
  • 8-10 sheets of graham crackers

Instructions 

  • Add the lemonade mix and zest to a thawed tub of cool whip and stir until fully combined.
  • Line 4-5 graham cracker sheets on a small parchment lined sheet pan or flat tray. Spread the lemonade mixture evenly over top of the grahams. Press the other grahams over top and gently press.
  • Freeze for at least 4 hours but I prefer overnight. Cut into squares and enjoy! We like to let them sit out for about 5 minutes or so before serving to allow them to soften up a bit.
