Lemonade Ice Cream Sandwiches
You only need 4 ingredients and about 10 minutes to made these refreshing lemon ice cream sandwiches! Use your favorite lemonade mix and turn a tub of cool whip into the perfect citrus frozen treat. The perfect cold treat for any hot day!

- 1 tub cool whip (8 oz.)
- 2 Tbsp powdered lemonade mix
- 2 tsp lemon zest
- 8-10 sheets of graham crackers
Add the lemonade mix and zest to a thawed tub of cool whip and stir until fully combined.
Line 4-5 graham cracker sheets on a small parchment lined sheet pan or flat tray. Spread the lemonade mixture evenly over top of the grahams. Press the other grahams over top and gently press.
Freeze for at least 4 hours but I prefer overnight. Cut into squares and enjoy! We like to let them sit out for about 5 minutes or so before serving to allow them to soften up a bit.
Storage: Store these lemon sandwiches in an airtight container for about 2-3 weeks in the freezer. After that time, the graham crackers can become a bit too soft. You can wrap these individually in plastic wrap if preferred.
These are the easiest to cut when they are pretty much solid and fully frozen. A sharp knife will easily cut them in half, if that is not the case for you, let them freeze longer. I like to freeze them overnight if possible. If not, it just gets a bit messy, which can be ok too!
You could use some lemon pudding mix instead if you don't have any lemonade. It should work just fine and can be adjusted to taste as well.
