This super simple cucumber feta chicken salad is a perfect way to take a classic chicken salad up a notch. Loaded with feta cheese, shredded chicken, chopped cucumbers, and only about 10 minutes to prep–this will be a new quick and easy lunch favorite. Perfect eaten with crackers, in pita, on toast or straight from the bowl.

Why We Love This Cucumber Feta Chicken Salad

Lots of Mediterranean flair in my recipes recently–can’t get enough of feta and all the fresh flavors. This cucumber feta chicken salad is a new salad recipe that came from a new lunch I haven’t been able to stop making!
This cucumber feta chicken salad:

- I often use rotisserie chicken when making this feta chicken salad, however, this Mediterranean Grilled Chicken is amazing in this recipe as well. You can use any leftover chicken or bake up some chicken with a bit of salt and pepper.
- If you can’t find baby cucumbers, you can use about half of an English cucumber instead.
- We use full fat plain greek yogurt for the most flavor and richness. You can use a lower fat content if desired.
- Fresh herbs will make the flavor so much better, but in a pinch, you can use dried dill and parsley. Start with about 1 teaspoon of each and adjust as desired.
Ways To Vary This Recipe
- optional add-ins to jazz up this chicken salad include: toasted pine nuts, chopped celery, chopped bell peppers, chopped olives, etc.
- add other seasoning: you can add a touch of oregano, paprika, coriander, etc.
- lessen the mayo and greek yogurt: if you don’t like your chicken salad too “saucy” for a lack of a better word, feel free to lighten the amount of these ingredients slightly and then adjust in the end.
- add a bit of lemon zest with the fresh lemon juice to pop the flavor a bit more
- add a touch of honey to balance the salad a bit more
- stir in some cottage cheese for another protein boost
Step-By-Step Instructions

Step 1: Add all the ingredients to a mixing bowl.

Step 2: Toss to combine and adjust seasoning to taste. Feel free to dig right in or chill for about 30 minutes to allow flavors to really meld together.

Recipe Tips
If prepping in advance, make within 24 hours for optimal flavor and texture. If you want to serve this later than making it, totally great. It will have the best texture if made about 24 hours ahead of time versus serving after that.
Use seedless cucumbers for best results. Baby cucumbers and English cucumbers are ideal in this chicken salad recipe. If you have a different variety, cut the seeded section out for vest results.
Storage
This feta chicken salad recipe will keep in the refrigerator for about 3-4 days in an airtight container. Freezing is not recommended when making this. The cucumbers will not thaw well and can become icy and water logged.

Feta Chicken Salad with Cucumbers

Ingredients
- 3 – 3½ cups shredded chicken
- 2 baby cucumber , very small diced
- 2 Tbsp red onion, finely diced
- ⅔ cups feta cheese
- ¼ cup mayonnaise
- ½ cup plain Greek yogurt
- 1 Tbsp Dijon mustard
- 2 Tbsp fresh dill, chopped
- 2 Tbsp fresh Parsley, chopped
- juice of half lemon
- ½ tsp garlic powder
- ½ tsp pepper
- ½ tsp sea salt, more or less as desired
Instructions
- Add all ingredients to a medium mixing bowl. Stir to combine.
- Adjust seasoning to taste. This can be eaten right away or chilled for about 30 minutes to let the flavor really soak in before eating.
