Why We Love these Blueberry Cheesecake Overnight Oats

Breakfast recipes that are inspired by desserts never fail me! Blueberry sauce all over cheesecake is a fan favorite for sure so I took that concept and turned it into a spoon-worthy, make ahead recipe!

Ingredient NOTES
- oats: regular or gluten-free will both work great. Some people like steel cut oats in their overnight oatmeal, but I find them too chewy. You can certainly use them, but I prefer rolled oats, or even quick cook oats if that is what you have.
- cream Cheese: I use the whipped cream cheese or spreadable cream cheese, the variety in the tub for easier stirring–you can use block cream cheese, just soften it first. For more protein, you could use equal parts cream cheese and plain Greek yogurt or even cottage cheese. Keeping this one dairy free? Lots of dairy free cream cheese options out there these days!
- milk: Your favorite regular or dairy free milk should be great! We love to use unsweetened almond milk (vanilla typically) or whole milk–we typically have both on hand. But any other milk should work–soy, oat, coconut milk, skim, etc. Choose your favorite.
- blueberries: fresh blueberries or frozen work but I personally prefer frozen wild blueberries more than any other type for this particular recipe. I find the fresh blueberries are often less sweet naturally unless it is blueberry season. But any will still work! In a pinch, you could use blueberry jam or preserves.
- sweetener: Pure maple syrup is my favorite sweetener, but feel free to add your sweetener of choice instead. You can use honey, a bit of brown sugar, regular sugar, etc.
- optional: crushed graham crackers–you don’t have to add them, but they for sure add some more cheesecake flavor
Recipe Variations
- serve the blueberry sauce over top of the oats: I went back and forth about what was the best way to serve this overnight oatmeal recipe. If you set the freshly made sauce over top of the oats when prepping, it doesn’t really stay on top. But if you want a beautiful blueberry layer on top, simply chill the sauce and the oats separately and then spoon the chilled, thickened sauce over top.
- add lemon zest: make this a lemon blueberry cheesecake flavor by adding about 1/2 teaspoon or so of lemon zest. It’s amazing!
- use another berry–blueberries are amazing to sub for the strawberry cheesecake overnight oats, but raspberries or blackberries would be amazing as well!
- make these high protein: feel to add a spoonful of your favorite vanilla protein powder, or a cheesecake flavor if you can find it. You could also add a couple spoonfuls of blueberry Greek yogurt for more protein.
Step-By-Step Instructions

Step 1: In a small, microwave-safe dish, add the blueberry sauce ingredients and stir well. Microwave in 30 second increments (for roughly 1½-2 minutes, but this will vary), stirring after each time until the blueberries start burst. Mash some of the berries to release juices and stir. Microwave for another 15-20 seconds and stir–the mixture should be thickened. If it’s not, you can heat another 15 seconds or so.

Step 2: Add all of the overnight oats ingredients together and stir well to combine.

Step 3: Spoon the blueberry sauce over top of the oats or stir them in to combine, chef’s choice! If you let the oats chill for about an hour before spooning the blueberry sauce over, it sits on top of the oatmeal much better after it has thickened a bit.

Step 4: Chill for at least 4 hours, but preferred overnight. Enjoy cold or warm them up in the morning. We love to garnish with a bit of lemon zest and crushed graham crackers.
Recipe Tips
You can eat these blueberry cheesecake overnight oats hot or cold. This is typically the biggest question I get about overnight oats recipes! Warm them up in the morning and toss some extra milk in if they seem a bit too thick after warming. I typically microwave them for about 45 seconds to one minute or so.
When testing these oats, I went back and forth on whether to keep the blueberry sauce separate or have it stirred in. In order to spoon it on top and have it served like a sauce over cheesecake, you need to chill the oats for about an hour to get it to rest on top. That seemed like more work than it needed to be, but I still wanted to give the option!
I like to add chia seeds to a lot of my overnight oatmeal recipes, but skipped it for this one to keep the steps and ingredients list down. Feel free to add a sprinkle of them!
Storage
These overnight oats will store well in a sealed airtight container for about 4-5 days. They will have the best texture if eaten within the first 2-3 days. The mixture will turn a bit more purple and become slightly thicker each day as more liquid is absorbed.
Give them a stir when you are ready to eat and add an extra splash of milk if they seem too thick or have dried up a touch. Heat in the microwave or eat them cold!

Blueberry Cheesecake Overnight Oats

Ingredients
2-minute blueberry sauce
- ½ cup blueberries, fresh or frozen, we love frozen wild blueberries
- 1 tsp maple syrup or preferred sweetener
- 1 tsp lemon juice
- ½ tsp cornstarch
cheesecake oats
- ½ cup rolled oats
- ½ cup milk of choice
- 2 Tbsp spreadable or whipped cream cheese, softened
- ½ tsp vanilla extract
- ½ tsp lemon juice
- 1-2 tsp maple syrup, adjust sweetness to taste
- pinch of salt
- 1-2 Tbsp optional: crushed graham crackers
Instructions
