Why We Love This Texas Toast French Toast Bake

A cozy breakfast recipe that is so simple to make–what more can I say?!
This easy French toast bake is:
- so simple to prep
- a great way to use up old bread
- so kid-friendly
- easy to vary
- easy to make-ahead
Whether you are whipping up this recipe for a holiday or special brunch, or just a simple weekend breakfast, it will be enjoyed by everyone for sure!
Ingredient Notes

- Texas toast bread or a nice thick cut bread does really well in this recipe. You could use another type of bread but will surely need more like 14-16 slices to soak up all of the egg and milk mixture.
- You can actually make this egg free with a combination of flax and milk. Use the same amount of milk but with 5 tablespoons of flax meal. And then make sure to allow it to chill for about 15 minutes. That should do the trick!
Recipe Variatons
- add a streusel topping: this particular recipe is a great base, but topping it with streusel makes it just a WOW experience.
- add some butter! You can add a tablespoon or two of melted butter to the egg mixture for a richer flavor. You can also pour it over top before baking.
- add some meat: brown some sausage and crumble it and toss it in or some chopped bacon for an extra hearty dish
Step-By-Step Instructions

Step 1: Slice up the Texas toast into bite sized pieces. For best results, use day old bread. I like to slice it up the day before and let it sit out.

Step 2: Whisk together the eggs, vanilla, milk and maple syrup until smooth.

Step 3: Pour the mixture over the bread and toss to combine and allow to coat all of the bread evenly.

Step 4: Whisk together the cinnamon and brown sugar in a small bowl. You can add a pinch of nutmeg or another warm spice if desired.

Step 5: Toss the cinnamon and brown sugar with the bread mixture to coat evenly.

Step 6: Bake until golden brown and egg is cooked through. Enjoy with an extra drizzle of maple syrup!
Notes and Tips
- You do not have to use Texas toast, but a nice thick cut bread does do really well in general for this French Toast bake. You could use a thick Brioche bread as well like I do for this Cinnamon Roll Baked French Toast.
- You could make this ahead of time and allow the bread to soak in the egg mixture overnight. For best results, prep just the night before baking.

Easy Baked French Toast with Texas Toast

Ingredients
- 12 slices texas toast
- 6 large eggs
- 1 1/2 c whole milk
- ¼ c pure maple syrup, not pancake syrup, for best results
- 2 tsp vanilla extract
- 2½ tsp cinnamon
- 3 Tbsp brown sugar
Instructions
- Preheat oven to 350° F.
- Cut or tear bread into small, 1-2 in. pieces and add to a 2-3 qt. greased casserole dish. (For best results, use day old bread or bread that is slightly stale. You can bake the bread pieces at 325°F for about 20-30 minutes as another option.)
- In a bowl, whisk together eggs, milk, maple, and vanilla. Pour egg mixture over bread and mix to coat well and allow all the mixture to be absorbed. (hands work well for this part!)
- Whisk together the cinnamon and brown sugar and sprinkle the mixture over top of the bread and egg and lightly toss.
- Bake for 30 minutes or until bread on top is browned and egg is cooked through.
- Cool for 5-10 minutes and then serve with warm maple syrup.
- Store leftovers in refrigerator in an airtight container.

I love the egg free option! Thank you for this yummy brekkie!
Not everybody can do eggs so it’s nice to know you can enjoy without!
This was the best weekend breakfast!!
Everything tastes better on the weekend though right?!
Love these lovely seasonal flavors together, so good!
Thanks Lindsey!
I haven’t made baked french toast yet but I definitely need to try! This combo sounds lovely.
It’s one of our faves!!
Having this for breakfast would be a great way to start any day!
100%!
Yum! This sounds like the perfect holiday breakfast for a big group. I love the combo of pears and cranberries – such a delicious mix!
So much more festive that way I think!
Made this morning with a loaf of gluten free bread. It was amazing… no leftovers. I had to call it “spiced pear bread pudding” since my daughter thinks she doesn’t like French toast.
Ha! So glad it worked out–maybe that’s what I will tell my husband because he loves bread pudding! Thanks for sharing, Mike.
I’m always too lazy to just make a single piece, so this idea is exactly what I needed!! Pinning so I can remember it for family get togethers or post long run!
It’s really easy and less mess I think!
This sounds delicious. I’ll have to make this over winter break!
Enjoy!
This sounds delightful! Would make a perfect Christmas morning breakfast. And I love that it will work with flax “eggs”!
Yes! It does, just gotta really allow it to set!
