    S'mores Brownie Skillet

    You don't need a campfire to enjoy this rich S'mores Brownie Skillet--a treat that will have you wanting s'more! Gooey marshmallows, graham crackers baked right into the brownie and chocolate bars are all part of this fudgy brownie that is best eaten with a spoon! Simple to toss together but won't last long!

    When it comes to s'mores, my marshmallows have to be fully on fire and blackened. Nice and crispy outside and gooey on the inside. But the rules change when we are talking about a S'mores Brownie Skillet like this one.

    Marshmallows baked into a brownie are like little gooey kisses. Brownies are already incredible, but tossing in more chocolate, graham crackers and marshmallows is just mind blowing. But s'mores and brownies in one bite? The best!

    I love a good skillet cookie, brownie, you name it. The cast iron skillet retains heat differently than a traditional pan so the cook time is actually less than normal.

    On top of that, skillet brownies are made to be eaten with a spoon, not necessarily finger foods like your average brownie. Think of it more like a brownie pie. A big scoop of ice cream is always needed with pie, and the same goes for this S'mores Skillet Brownie recipe.

    There is really not much to whipping this recipe up to be honest. It's not more than 1, 2, 3.

    1. Mix everything up.
    2. Pop it all in the skillet and bake.
    3. DIVE IN. You don't have to wait until it cools--well wait until it's at least not gonna burn your tongue.

    It's not like your typical brownie that needs to be cut into nice even pieces. This brownie is made to be messy and eaten straight from the pan. I think you can certainly handle that, right?!

    What you need to make this recipe:

    • No chocolate bars? You can always use chocolate chips instead.
    • If you only have the jumbo marshmallows, simply cut them up into smaller pieces and toss them in. That will work just fine as well.

    How to make this recipe:

    • Preheat the oven to 350°F. Add eggs, melted butter, and vanilla to a medium mixing bowl. Whisk to combine. (step 1)
    • Add in the sugar and cocoa and whisk to incorporate. (step 2)
    • Add in the flour, baking powder and sea salt and stir only to incorporate. Do not over stir here--it can make the brownies a bit more cake like and no one wants that. (step 3 and 4)

    • Add the crushed graham crackers, ⅔ of the Hershey Bars roughly chopped and the marshmallows (you can save some of these for the top but not necessary. I did add some extra on top in the end and torched them slightly to get that roasted marshmallow look.) (step 5)
    • Gently fold the ingredients in, making sure not to over stir the batter in whatever way possible. As I mentioned earlier, we want fudgy, gooey brownie, not cake. (step 6)

    Add the batter to a well greased 8 inch cast iron skillet and bake! Bake until just under done. You want the toothpick to come out with little moist crumbles, not clean. When you remove from the oven, you can add more broken chocolate bars and marshmallows on top to melt. (see below)

    Notes:

    • As I mentioned, it is not ideal to over mix brownie batter. Once all the dry ingredients have been mixed in, take it easy as possible on the mixing for the best outcome.
    • I use an 8 inch cast iron skillet. These brownies bake to where I like them in about 20-23 minutes. I lean more on the 20 minute side. If your skillet is a bit larger, the bake time may be less. But honestly, skillets and ovens are not the same so little things can adjust the time. Keep a good eye on the brownies. I swear mine is super quick cooking!
    • If you don't have a cast iron skillet, you can still use an 8 inch or 9 inch baking pan. A baking pan may take slightly longer, so closer to 25 minutes.

    You can most certainly have a night around the campfire but serve brownies right? But whether it's S'mores or a S'mores Brownie Skillet, hopefully have some special people to share a treat and some time with.

    Ingredients 

    • ½ c butter, melted (1 stick--plus more to grease pan.)
    • 1 c sugar
    • ½ c cocoa powder
    • 2 large eggs
    • ½ cup Flour
    • ½ teaspoon baking powder
    • ½ teaspoon sea salt
    • 1 c mini marshmallows plus more for topping
    • 3 sheets graham crackers (4 crackers per sheet), crushed
    • 4.4 oz. Hershey Bar (one XL bar), roughly chopped
    • 1 ½ teaspoon Vanilla

    Instructions

    • Preheat oven to 350°F. In a medium bowl, whisk together eggs, vanilla and melted butter. Add in the sugar and cocoa powder and whisk to combine.
    • Add in the flour, baking powder and sea salt and gently stir until incorporated. Do not over mix in this part. Add the crushed graham crackers, marshmallows, and ⅔ of the chopped chocolate bars.
    • Grease an 8 inch cast iron skillet with butter and pour the batter into the skillet. (if using a baking pan, line with parchment) Bake for 20 - 25 minutes or until the top is just under done and a tooth pick comes out with some moist crumbs on it versus clean. The skillet will bake it a bit more when you remove it from the oven and it will be nice and gooey perfection!
    • Add the rest of the chopped chocolate on top as it will melt slightly. If desired, add more marshmallows and lightly toast them with a kitchen torch or broil for about 1-2 minutes, but keep a really good eye on them. No need to wait very long. Just long enough to grab some spoons and a few scoops of ice cream!

    Notes

    • If you double or triple the recipe, the cook time may be longer if the pan is only a little bit larger. Just keep an eye on it!
    • If you don't have a cast iron skillet, you can still use an 8 inch or 9 inch baking pan. A baking pan may take slightly longer, so closer to 25 minutes side.

      Doubled the recipe to use a 12” cast iron pan. We used Scooby snacks and semi-sweet chocolate chips since we didn’t have graham crackers and a Hershey bar on hand. We topped it with the chips and mini marshmallows both of which melted just enough to be gooey. Total bake time was 40 min. Definitely saving this recipe!!

        Soooo weird they aren’t showing up in the recipe. Adding them back in now. 1/2 c flour and 1 1/2 tsp vanilla. Thanks for pointing this out!
