These simple no bake Chocolate Coconut Date Balls are a great snack that will keep you fueled and let you enjoy all of the chocolate! Only about 5 minutes to make and an extra chocolate drizzle to make them all the more delicious! You will have a very satisfied sweet tooth with these!

No bake energy bites are my favorite easy snack. The flavors are endless and they are so perfectly sweetened with dates.
These rich chocolate coconut date balls were inspired by my love of Lara Bars. I always have these or some sort of no bake bite on hand for the best snacking!

Why You Will Love These Chocolate Coconut Date Balls:
- You only need a handful of simple ingredients.
- They are easily made vegan and gluten free for those with dietary needs.
- You can make these no bake chocolate coconut energy balls in literally 5 minutes.
- They are freezer friendly.
- But most of all, the chocolate and more chocolate with that drizzle!
Ingredients and Substitutions:
- pecans: I use raw nuts in these chocolate coconut balls. If you have an allergy, you can use all almonds or all pecans. You can sub walnuts or cashews too.
- almonds: See notes about the pecans above.
- medjool dates: big sweet dates add the touch of sweetness to this recipe. Make sure to remove the pits. Medjool dates are larger than other dates, so if you use smaller pitted dates, you may need more of them.
- coconut: I use unsweetened shredded coconut. You could use sweetened coconut if that is what you have on hand. They will add extra moisture to the energy bites.
- vanilla extract
- cocoa powder: I use unsweetened cocoa powder. You can use a dark cocoa powder if you want more of a rich, dark flavor. You can also use cacao powder if desired.
- sea salt: just a touch is all you need!
- optional add-ins: you could add a spoonful of chia seeds, protein powder, hemp seeds, mini chocolate chips are all great options to toss in as well.
How to make these energy balls:
- Combine the nuts in a food processor. Process until a fine, grain like texture.
- Add the other ingredients and process until a dough starts to form. It will begin to ball up in the food processor. You can add a couple teaspoons of water if the mixture does not seem to form into a ball or is dry.
- Roll the mixture into bite sized balls and chill for about 15-20 minutes.
- If desired, you can melt chocolate chips and drizzle the melted chocolate over these energy bites for more chocolate goodness!
Recipe Tips
- If your dates seem dry, you can soak them in hot water for about 10 minutes before making this recipe. This will help add the needed moisture into the chocolate balls so they hold together well.
- As long as you use 2 cups of any combination of raw cashews, almonds, pecans or walnuts, you should have success with these bites!
Storage:
Store these date balls in the refrigerator in an airtight container for about 2 weeks. You can also freeze them for about 2 months in a freezer safe container.
These can be stored at room temperature as long as the storage location is on the cool side. They may soften up a bit if doing so, but can still be stored this way.

No Bake Chocolate Coconut Date Balls
Ingredients
- 1 cup raw pecans
- 1 cup raw almonds
- 12-14 medjool dates, pitted
- ½ cup shredded coconut, unsweetened
- 1 tsp vanilla extract
- 2 – 3 T cocoa powder
- 3-4 Cranks or sea salt
Optional
- 1/4 cup dark chocolate chips
Instructions
- In a food processor, process almonds and pecans until a fine, grain like texture.
- Add all other ingredients and process until a dough begins to form. (If it seems to be a bit dry, add a tsp of water or so and process until the dough forms.)
- Roll dough into bite sized balls and chill for about 15-20 minutes before serving.
- Optional: If using chocolate drizzle, melt chocolate chips and stir well. Transfer to a plastic baggie and cut a small slit in the corner. Drizzle over each ball. Allow to chill for about 10-15 more minutes.
Notes
