Ingredients and Swaps:
- bread: any bread should work great. I love a fresh loaf of multigrain with this goat cheese grilled cheese sandwich, but have made it with sourdough and other breads which have still been incredible.
- blueberries: fresh or frozen
- maple: you can sub honey or another sweetener. This is just to sweeten the blueberries a bit.
- basil: fresh is best here for sure!
- goat cheese: I love using a honey goat cheese in this sandwich. If you can’t find any, soften the goat cheese and stir a teaspoon of honey into it.
- butter: whatever you like to add to your bread for grilled cheese sandwiches is fine here.
How to make the best Blueberry Basil Grilled Goat Cheese Sandwich:
The thick, fresh made blueberry sauce is what makes this grilled goat cheese sandwich. Sure, you could use blueberry jam if you prefer, but it only takes a few minutes to whip this up.
Bring the blueberries and maple syrup to a light boil in a small sauce pan. As the mixture begins to boil, mash the blueberries to release the juices and stir. After 5 minutes, strain the liquid from the berries. Set aside.
Once the blueberries are ready, prep the rest. Spread butter over one side of each bread slice. Add goat cheese to the inside of the bread. Lay both pieces butter side down onto pan.
Spread the blueberry sauce over top of one side of the bread. Add the basil leaves.
Allow the bread to cook to golden brown and then assemble the pieces together. You are all set! Enjoy!
Expert Tips:
- You can but a tiny bit of water into the pan with the blueberries if you want to. I didn’t need any corn starch or anything. For this Blueberry Goat Cheese Grilled Cheese, the sauce is just heated berries for the most part, keeping it as simple as possible!
- Cutting this sandwich can get a bit messy. You can cook them in smaller, halved pieces if that is how you prefer serving them.
- Not a fan of goat cheese? Cream cheese will be amazing as well!
- You don’t want to overdo it on melting goat cheese as it will become a bit too thin. The goat cheese won’t get too melted if you cook this on medium heat and allow the bread to grill slowly. If the bread is thicker that helps as well.
