A big bowl of oatmeal is great in the morning, but taking your oatmeal and turning it into fluffy pancakes is next level!

These apple oatmeal pancakes are the most kid approved pancakes in our house–hoping they will be for you as well!

Why you will love these:

  • Easily made in the blender: from processing the oats into flour, to whipping up the apple pancake batter, you don’t have to make much of a mess other than dirtying up the blender to make these.
  • Super kid friendly. We started our little guy on these from the time he was about one and they continue to be his favorite. He stopped eating oatmeal in its traditional form around that time so I worked on a way to incorporate oats into pancakes instead!
  • Easily made gluten free. If you can’t have gluten, don’t worry–just make sure you have certified gluten free oats or oat flour and you are set for these apple oatmeal pancakes.
  • They are freezer friendly. I make a couple batches at a time and then freeze them for up to two months at a time.

Ingredients:

  1. Rolled oats or oat flour: Making your own oat flour is soooo simple and much more cost effective.
  2. Egg
  3. Milk: I switch back and forth between whole and almond milk. It always just depends on what I have or what needs to be used up.
  4. Apple: gala or fuji for me, every time. But use your favorite for sure!
  5. Cinnamon: My favorite spice. I add it all and more!
  6. Vanilla
  7. Apple Cider Vinegar: This adds some extra fluff to your pancakes by reacting with the milk and other ingredients.
  8. Baking Powder: Make sure it’s fresh. This is an overlooked ingredient and it often sits for long periods of time in the pantry. If it’s not fresh, it will impact anything you use it in–and you want fluffy apple oat pancakes, right?
  9. Oil: I typically go with melted coconut oil or canola oil.
  10. Maple Syrup: I prefer maple to sweeten these but also add in some brown sugar sometimes too.

Can I make these Apple Oatmeal Pancakes vegan?

You sure can! Use a flax egg in place of the regular egg by whisking together one tablespoon of flax meal with three tablespoons of water. Chill in the refrigerator for about 10-15 minutes so it becomes gel-like. Use plant based milk and then you will have yourself a vegan stack of apple oat pancakes.

Recipe Notes and Tips:

  • If you have oat flour ready to go, you will need about 1 1/2 cups oat flour versus the 2 cups of oats. 2 cups of rolled oats will yield approximately that much oat flour.
  • You can grate or small dice extra apples and add them into the apple oatmeal pancake batter for even more apple flavor. Chopped pecans or nuts are great in these as well.

Instructions

  • In a food processor or high powered blender, process the oats until a flour consistency.
  • Transfer flour to a mixing bowl.
  • In a blender, add all other ingredients and blend until smooth and combined.
  • Add the flour to the mixture and pulse or mix to combine. (You don't have to use the blender for this, you could also pour the mixture into the bowl with the flour and stir to combine!) If the batter seems too thick, add more milk one tablespoon at a time until desired consistency.
  • Pour desired amount for each pancake over a griddle or pan at about medium to medium high heat.
  • Heat until bubbles form all around the edges of the pancakes and then flip.
  • Cook to desired golden brown.
  • Add your favorite toppings and enjoy!

How many pancakes does this make?

    1. Lorie says:

Hi! It makes about 6-8 4 inch pancakes. You can certainly make them bigger!

  2. Amanda says:

Hi! This sounds delicious! How would you go about thawing if freezing, and reheating?

    1. Lorie says:

Hi! I typically pop them in the microwave covered with a paper towel and heat for about a minute or so. If I know we are going to eat then the next day, I pop them in the fridge to thaw overnight. Enjoy!

  3. Cristy says:

I actually found the mixture to be really watery. I used coconut milk. Had to let it sit for a few mins before pouring.

    1. Cristy says:

Sorry, i forgot to add… these were great! 😅 I’ve never tried anything like this but am switching my diet to eat healthier and these were simply delicious!.10/10 recommend

      1. Lorie says:

Yay! So great to know Cristy! Happy to hear you enjoyed them!

    2. Lorie says:

Yes–letting them sit is ideal in general!

  4. Sandra says:

Tried them out this morning (although I only used 1/4 of the recipe and got a nice pancake out of it) and they are really delicious and also very filling. Will definitely make them again!

    1. Lorie says:

Oh wow, good to know that they came out great just for one pancake!

  5. Morgan says:

The batter turned out VERY thick when I made these according to the recipe. I had let it sit for 10 min as I have found that has helped other oatmeal pancake recipes i’ve Made actually fluff when I cook them, so maybe that was the problem? I added about 1/4c more milk after
The first pan and they were softer than the first ones which were very dense. The flavor is nice though and I’m happy to have an apple pancake recipe that doesn’t use applesauce!

    1. Lorie says:

Thanks for the feedback, Morgan–I will make these this week and see what I can do!

    2. Damaris says:

Easy and delicious! Like Morgan I had to add more milk though. Next time I will use less oats and more apple. I like the ease of just chucking the apple in the blender but one day I might try just mixing in some grated apple.

      1. Lorie says:

Ok, good to know! I will play around with this recipe over the holiday and see if I can help make things a bit better!

  6. Lina says:

Delicious! Added some ground clove and nutmeg, but otherwise made as written. Will double the recipe next time!

    1. Lorie says:

Oh yum–sounds perfect to me! And yes, I double and triple them often!

    2. Valerie says:

That’s what I was thinking. Clove and nutmeg work completely well with apples.

  7. Natalie - Katarina's Paperie says:

These sound AMAZING! And even a little healthy. I love apples and cinnamon flavors. Can’t wait to use fresh apples that we pick this fall. Thanks for the idea!

    1. Lorie says:

Agree! I love apple season. Fall is the best!

  8. Eda says:

As a big fan of oatmeal in any form, this sound fantastic to me, Lorie! Can’t wait to try it. Just one thing. What do you do with the apple? Peel and chop?

    1. Lorie says:

Hi Eda! So sorry for the delay in responding. Somehow I initially missed this comment. Do I just cut the apple, skin and all off the core and tossed it into the blender. If you have a high powered blender then you shouldn’t even detect the skin was on! Hope you love them!

  9. LINDA THOM says:

Apple-Cin Oatmeal pancake very good! I used half the cinnamon and used half buttermilk and half 1% milk. MADE 7 -6″ PANCAKES.

    1. Lorie says:

So glad you liked them Linda! Thanks for sharing!
