These simple handheld pancake bites are the perfect way to easily prep breakfast! Less than 10 minutes to prep, freezer-friendly and super kid-friendly breakfast option. Easy to modify with lots of add-ins to make these a family favorite option for the busiest mornings. Serve them up with a dollop of Greek yogurt and fresh fruit and you are set!

Ingredient Notes
- You can adjust the sweetness as desired, but I suggest keeping the maple syrup for the added flavor and richness
- You can use white whole wheat flour in place of all-purpose flour to up the nutrition.
- We use whole milk in these pancake bites, but another type of milk can work such as skim or 2% milk, or even almond milk or another milk alternative.
Ways To Vary This Recipe
- possible add-ins: mini chocolate chips, chopped pecans, sausage crumbles, chopped bacon, sprinkles, a swirl of nutella, blueberries (I prefer thawed frozen wild blueberries as they are smaller), shredded coconut, more warm spices like cinnamon or pumpkin pie spice, etc., and more!
- To give these a protein boost, you can replace 1/4 cup of the flour with about 1/4 cup of vanilla protein powder. If the mixture seems too thick, add a bit more milk. You can also stir in a 1/4 cup of your favorite Greek yogurt.
Step-By-Step Instructions

Step 1: Whisk the flour, baking powder, sugar, salt and nutmeg in a small bowl. Set aside.

Step 2: Add the eggs, milk, vanilla, butter and maple syrup to a medium bowl.

Step 3: Whisk to combine.

Step 4: Add in the dry ingredients and mix only until combined. Mixture will be smooth with some lumps, which is ok!

Step 5: Spoon approx. 3 Tbsp batter into 24 well greased muffin cavities of a regular muffin tin, or use a silicone muffin pan and just spoon it right in. If you only have one muffin pan, work in batches.

Step 6: Bake for about 13-16 minutes or until edges are a very light golden brown and a toothpick comes out clean. Cool for about 10 minutes before popping them out. Enjoy!
Recipe Tips
Try not to over bake these pancake bites for best results. It is better to slightly under bake them versus over baking as they will dry out and become tough.
Only mix the dry into the wet ingredients until combined to prevent the bites from becoming tough or overly chewy. Try not to over mix the batter for the best texture. If you mix too much, the bites will not have the same softness and fluffiness.

Pancake Bites Storage
Store in the refrigerator in a sealed airtight container for about 5-6 days. To reheat, pop in the microwave and heat for about 30-45 seconds.
To freeze, allow the bites to cool completely and then place in a freezer-safe container. You can thaw overnight in the fridge or heat from frozen. Wrap in a paper towel and microwave in 30 second intervals until warmed.

Ingredients
- 2 cups flour, spooned and leveled, 250g
- 3 tsp baking powder
- 3-4 Tbsp sugar, 38-50g
- ¼ tsp sea salt
- ¼ tsp of nutmeg
- 3 Tbsp unsalted butter, melted , 42g
- 2 Tbsp maple syrup
- 2 large eggs
- 2 cups whole milk, 480g
- 2 tsp vanilla extract
Instructions
