Why We Love These Roasted Sweet Potatoes and Brussels Sprouts

These maple dijon roasted veggies are on repeat the second fall hits. They are a perfect weeknight side dish, but also a favorite Thanksgiving recipe–not everyone wants only butter and bread on the holidays, veggies have a place as well!

The key to these roasted veggies is getting them nicely coated before roasting and then tossing the pecans in the marinade and adding them to the pan as well in the end. I pick out a lot of pecans for myself, ha.

Ingredient Notes

  • You can find brussels sprouts halved already in the pre-packed section of the produce department in most groceries these days. This is great for time saving when you need it.
  • We do not peel the sweet potatoes. They hold together well when the skin remains on the potatoes, but if you really aren’t a fan, you can remove the skin.

Ways To Vary This Recipe

  • add cheese: in the last few minutes, cover the veggies with freshly shredded parmesan cheese or add some goat cheese to the bowl just before serving.
  • use fresh herbs: adding in fresh thyme, rosemary, etc. adds even more flavor
  • drizzle a balsamic glaze over top to finish before serving
  • use a different nut or seed: feel free to use walnuts or pepitas in place of the pecans, or another preferred nut.

Step-By-Step Instructions

Step 2: Line a baking sheet with parchment or spray well with oil. Add the brussels sprouts and sweet potatoes to the pan. (you can do this in a bowl if preferred.) Drizzle the maple dijon mixture over top and toss to combine. Make sure to coat all of the veggies–use clean hands to toss too and really get it covered for best results! Recipe Tips

Cut vegetables in as uniform size as possible and arrange ingredients in a single layer for the most even cooking. If your sheet pan is too small, spread them across two sheet pans and roast side by side.

Oil your sheet pan or line it with parchment paper. Even though the vegetables are tossed in oil, they can become stuck fairly easily to the pan. I learned that the hard way for sure!

Serving Suggestions

Lots of main dishes to serve these roasted sweet potatoes and brussels sprouts with. Some of our favorites include: Top Round Roast Beef, Maple Bacon Wrapped Pork Chops or this Grilled Balsamic Chicken.

For Thanksgiving, serve these with this Crock Pot Turkey Breast, Cranberry Apple Chutney, Cheddar Gruyère Mac and Cheese, Parmesan Bacon Green Bean Casserole, and more!
