These brie stuffed crescent rolls are a delicious way to take classic crescent rolls up a notch. Stuffed with creamy brie, pomegranate and chopped rosemary and then smothered in honey butter and flakey sea salt fresh from the oven–these will take any meal to the next level! So quick and easy to prep too!

Pomegranate, Rosemary and Brie, Oh My!
That’s certainly what you will be singing once you bite into one of these cheesy goodies, that’s for sure. This holiday, skip the butter and rolls and add a bit of flair to what we all love so much: bread!

A few simple ingredients can turn our favorite crescent rolls into an amazing experience.
My husband could live on pillsbury biscuits and crescents but they get a bit boring to me. I try to add a little pizazz sometimes, and this one has seemed to be a winner–it’s a regular request these days!
These make for a simple side dish that will wow the whole family. Perfect for a weeknight dinner but AMAZING as part of the holiday spread with the stuffing, turkey and more as well!

- Any 8-count crescent roll package should work. Store brand, pillsbury, etc. Cook at the recommended baking temperature per the package for best results.
- You can keep the rind on the brie if you would like, but int his recipe I find it better to remove at least the thicker outer edge–especially if you want to try for a cheese pull.
Ways To vary This Recipe
- use a different cheese: while we looooove the brie, this will still work with a lot of other cheeses. Mozzarella cheese is pretty amazing in crescents. Cream cheese is another option if you want to go outside the box.
- vary the herb: we love rosemary in this recipe, but thyme is another good one.
- add some meat: some chopped bacon could be fun, or even some very finely diced ham. A little piece of prosciutto maybe?

Step 1: Chop rosemary, pat the pomegranate arils dry, and cut brie into approx. 1 ½ -2 inch pieces. I remove the rind a lot lately although I used to keep it on (you can cut off the rind if desired). Lay out each crescent roll dough. Place a piece of brie, 4-5 Pomegranate arils and a sprinkle of rosemary close to the wide edge.

Step 2: Roll tightly into crescents and line on a parchment lined baking sheet.

Step 3: Bake for 9-12 minutes or according to your package instructions, until golden brown.

Step 4: Whisk together the melted butter and honey and brush over the tops of each and sprinkle with flaked sea salt. Cool for 3-5 minutes before serving.

Storage
Store any leftovers in an airtight container in the refrigerator for about 2-3 days. These are best eaten fresh, but are still ok to reheat and eat within a couple days!
