These Buffalo Air Fryer Baby Potatoes are the perfect crispy side dish with a kick of spice. Less than ten minutes of prep and minimal ingredients, this recipe will be a new family favorite to pair with burgers, chicken, and more!

Lots of foodies had air fryers on their list over the holidays, so the new year will obviously be all things air fried.

Potatoes are hands down my FAVORITE food in the air fryer. French fries, wedges, tator tots, home fries---any and all potatoes are where it's at air fried. No need to ever cook a potato any other way.

These Air Fryer Baby Potatoes are little crispy bites smothered in the perfect buffalo sauce. Forget the wings and the cauliflower--buffalo potatoes are the new trend, or at least they are for me!

If you were to roast these potatoes, you would be setting yourself up for close to an hour. But the air fryer cuts that all down in a big way. And still cooks up the baby potatoes nice and crispy!

What you will need to make this recipe:

    • I use new or baby yukon gold potatoes for these buffalo potatoes. You really don't have to use these but I find them so simple to just chop into quarters so they are my go to. As long as you cut your potatoes into bite sized pieces, you will be fine!
    • Frank's Red Hot is ALWAYS our favorite and will be forever. You can use another brand if you like.

    How to make these:

These air fryer baby potatoes are so easy. And done in no time. Bonus!

    • Rinse and cut your potatoes into bite sized pieces. If you are using mini potatoes, quarters should work great.
    • Toss the potatoes with the olive oil, garlic powder, salt and pepper. Stir well to coat all of the potatoes. (steps 1-2)
    • Spray your air fryer basket with a light spritz of oil for best results. Place all of the potatoes into the basket and spread them out as even as possible. You can work in batches if you prefer, but it is ok if the potatoes overlap a bit. (step 3)

    • Fry for the time directed in the recipe card, giving them a really good shake to toss about halfway through. Allow them to cook until golden and crispy on the outside. You can even fry a bit longer for extra crispy and brown potatoes. (step 4)
    • While the potatoes are in the air fryer, melt the butter and whisk it with the hot sauce. You can add an extra dash of garlic powder if you like here--I am big on garlic so I always go a bit extra on it.
    • When the potatoes are cooked to your liking, transfer them to a medium bowl. Pour the buffalo sauce over top and toss to coat evenly. Cool for a few minutes and then serve with a sprinkle of blue cheese or a little drizzle of ranch! Yum! (steps 5-6)

    Notes and Tips:

    • For a more mild sauce, cut the amount of hot sauce down in these air fryer baby potatoes. The butter balances the level of spiciness so just reduce the amount of hot sauce!
    • You can eat these without any sauce, or simply use the buffalo sauce as a dip. The sauce tends to lessen the crispiness of the potatoes slightly, so serving it on the side will help keep them extra crisp.
    • I have a 5 quart air fryer and the potatoes fit nicely in the basket for this recipe. There is very little overlapping. If your air fryer is only a 2 quart, you could cook in batches.

What to serve with this recipe:

A burger is always a great idea when it comes to anything potatoes. Might I suggest these Ultimate Air Fryer Burgers? But that may be too much air frying for one night. You could opt for some Cilantro Lime Black Bean Burgers instead.

We have enjoyed these Air Fryer Buffalo Potatoes with Chicken Tenders as well. Also, these would pair perfectly with some Vegetarian Sloppy Joes!

    Ingredients

    • 1 lb petite potatoes, diced
    • 1 ½ T olive oil
    • ½ teaspoon garlic powder salt and pepper
    • ½ teaspoon cracked pepper
    • ½ teaspoon sea salt
    • 3 T butter
    • ⅓ c Frank’s red hot

    Instructions

    • Prep the potatoes. Chop into bite sized pieces. Toss with olive oil, salt, pepper and garlic powder. Spritz the basket of air fryer with spray oil.
    • Place all of the potatoes in the air fryer basket and spread evenly. If some are overlapping that is okay. Set the air fryer to 400°F (preheat if needed) and heat for 9 minutes.
    • After about 9 minutes, give the potatoes a good shake or toss them with a spatula to move them around. Cook for another 7 minutes or until cooked to desired crispiness/brown color.
    • While the potatoes cook, melt the butter and whisk it well with the hot sauce. When potatoes are cooked, transfer them to a medium bowl and toss with buffalo sauce. Cool for a few minutes and then serve!
