Any time dinner comes together in under 30 minutes and with minimal ingredients, I am soooooo there for it.
This simple, veggie packed Sausage Sheet Pan dinner is so versatile, easy to prep and a dinner that requires just a single pan.
My love for sheet pan dinners began with this Parmesan Crusted Steak Dinner and continues to grow. This sausage version will 100% go down as the easiest ever!

Why You Will Love This Sausage Sheet Pan Dinner:
- Requires only one dish to cook. You can do it ALL on the sheet pan. The only other thing you will need is a cutting board and knife. Seriously, this is a dream come true cause dishes are what I despise the most.
- Easily varied to your liking. You can use your favorite veggies, whatever sausages you would like. You can serve it as is or over top of rice or quinoa. Lots of options to fine tune this dinner to your needs.
- You can use your favorite sausages–even vegetarian! That’s right, you can even make this meal vegetarian or vegan. We typically use smoked turkey sausages or Kielbasa but also love chicken sausages. Yum!
- An easy way to add lots of veggies. Roasted vegetables are always a favorite around here. This sausage and veggie sheet pan dinner is a great way to get a lot of them into your day. Add all of your favorites to this meal!
Ingredients:
- sausages: I love either Kielbasa or smoked turkey sausage. As long as it’s a precooked sausage, you should be good to go! So pick your favorite.
- veggies: I use peppers, broccoli, and onions. I used to add sweet potatoes to the dish, but I like to serve this sausage sheet pan dinner over rice often so omitted them but they can still be great too. Mushrooms are another delicious option.
- olive oil: I prefer extra virgin olive oil. If you have a preferred cooking oil, you can opt for it and should be fine.
- garlic: Freshly minced if possible. You could use about 1/2 teaspoon garlic powder if you don’t have fresh garlic cloves.
- seasoning: thyme and oregano. I find these two complement the meal so perfectly!
Step-By-Step Instructions:
- Chop all of your veggies and slice the sausages into about 1 inch pieces. Add them all to your sheet pan.
- Drizzle the olive oil over top along with the garlic, thyme oregano, salt and pepper. Toss well to combine and coat. Make sure to really get the sweet potatoes with the olive oil–you will want them coated.
- Bake for about 20 minutes in preheated oven. You can toss the ingredients half way through, but it is not necessary.
- Once the sausages are cooked and veggies are tender, turn the oven to Broil and broil on high for about 2-3 minutes to give everything a bit of crispiness.
- Remove from oven and cool for several minutes before serving. Enjoy as is, over rice, with quinoa or any of your other favorites!
Recipe Tips:
- To save time, chop all of the veggies in advanced. If you chop all the vegetables early, tossing this sausage sheet pan dinner together just before cooking takes only a minute or two.
- While you could cook this meal with the sausages whole, I advise slicing them. Slicing the sausages will allow them to become a bit crispier around the edges and cook fully and more evenly.
- You can peel the sweet potatoes if preferred. We prefer our skins on and don’t want to spend any more time on dinner than we have to!
- If you are using a sausage with a higher fat content, it will produce more oil when cooking. When I use Kielbasa for this sausage dinner, I often cut down the olive oil by one tablespoon. The sausage will release more oil than others and I don’t want the vegetables to be too oily or soggy.

- Chop and prep all of the vegetables and sausages. Preheat oven to 425°F.
- Add vegetables and sausages to a large sheet pan. If they don't all fit on one, you can use two pans. Add the olive oil, garlic, oregano, thyme, salt and pepper. Toss well to evenly coat.
- Cook for about 20 minutes or until vegetables are tender and sausages are starting to become crisp around the edges. Turn the oven to broil for about 2-3 minutes to add a bit more crispiness to the veggies and sausages.
- Remove and allow to cool for several minutes before serving. Serve over rice, quinoa or as is!
