If you are one of those people who orders your fries extra crispy, then these Air Fryer Potato Wedges are going to pretty much blow your mind.

These are crispy with a capital C-R-I-S-P-Y.

Currently you are about 20 minutes away from the easiest, crispy, seasoned parmesan goodness. The side dish that is going to be your go to with any and all dinners.

Your ketchup will thank you–promise.

Why I Love These Air Fryer Parmesan Potato Wedges:

  1. Baked potato wedges are going to take you about on hour. Not in the air fryer though. These are cooked in about 12 minutes.
  2. The crispy texture is like what you get at a restaurant but without the extra grease. I love french fries and especially the wedges. But they sit on my stomach a bit too much.
  3. They are so so so simple. Toss everything together and then pop them in the air fryer.

To date, these Air Fryer Parmesan Potato Wedges are my favorite thing to make in the air fryer. They are a weekly thing around here, and leftovers are never a thing. Isn’t that the idea?

Recipe Ingredients:

  • potatoes. I prefer russet potatoes when making these potato wedges in the air fryer. I typically try to find the ones that are a bit on the smaller side for potato wedges, but since I am not really going into the grocery these days, I get what I get from the grocery pick up. Bigger will still work, I just prefer them on the small/medium side.
  • parmesan: grated parmesan works best for this recipe. It easily adheres to the potatoes and gets nice and crispy when fried.
  • olive oil: extra virgin olive oil is our preference. A nice one will add all the more flavor.
  • garlic: I prefer freshly minced garlic cloves for these parmesan potato wedges but you could also opt for garlic powder if you don’t have any. About 1/2 teaspoon garlic powder or more to taste should do.
  • seasoning: I use a combination of paprika, parsley and then salt and pepper. These can easily be adjusted to your liking. I also like to add in some Italian seasoning or cayenne for a fun variation sometimes.

How to Cut Potatoes into Wedges:

  1. Cut your potato in half length-wise.
  2. Cut each half into half, also length-wise.
  3. Take one of the quarters/smaller pieces and lay it on your cutting board with the inside part of the potato facing up.
  4. Slice the potato right down the middle of the potato through the thin point of the potato.
  5. If your potato is pretty thick, you may cut these smaller pieces once again or possibly cut it into thirds. Repeat until all of the potato wedges are cut.

How to Make These Parmesan Potato Wedges:

In a bowl, toss together the potato wedges, olive oil, spices/seasonings and parmesan. I like to literally use my hands to help toss and get all of the potatoes evenly coated. (steps 1-3)

You can add a touch more olive oil if it seems like some of the potatoes still have dry spots.

Spray your air fryer basket generously with oil and arrange the potato wedges as evenly as you can. It is ok if some of them are touching, but try not to overlap too many. You can also air fry in batches if your basket is small. (step 4)

Since you will be tossing these in the middle of cooking, a little overlapping should not hurt too much. I still find that all of them get pretty crispy overall.

Set your air fryer to 390°F and allow to preheat if necessary (some are very quick to heat up and you don’t have to actually preheat). Cook for about 8 minutes. Remove the basket and flip the wedges. Cook for another 5-7 minutes, or until desired crispiness is achieved. (step 5)

Allow to cool for several minutes and enjoy with your favorite dipping sauce.

Chef’s Tips:

  • To reheat these parmesan potato wedges: You can easily re-heat these Air Fryer Parmesan Potato Wedges in the air fryer. Just heat them for about 3-5 minutes and they should be nice and crispy again. I have served them leftover like this to my husband and he hasn’t known the difference!
  • You can use other potatoes for this recipe. This recipe should work well with other potatoes. If you are using a smaller potato, or a thinner cut, cook time may need to be adjusted.
  • These can easily be made dairy free. If you need to have these potato wedges dairy free, you can easily omit the parmesan and still have delicious potatoes. Or you can use a dairy free cheese if preferred.
  • You can adjust the seasoning and spice when making these potato wedges. Kick the heat up with a touch of cayenne. A touch of Italian seasoning is also delicious.

What to Serve With These Air Fryer Parmesan Potato Wedges:

I know I said these Air Fried Potato Parmesan Wedges are for more than just burgers, but they still would go mighty fine with a Spinach and Feta Turkey Burger or maybe make it an air fryer kind of night with Ultimate Air Fried Burgers?

Air Fryer Potato Wedges with Parmesan

Instructions 

  • Slice the potatoes into wedges and place in a mixing bowl. Add in all other ingredients and toss well to coat evenly. The thickest part of the potatoes shouldn’t be more than 1/2 inch. If they are, you may need to cook them a bit longer.
  • Spray the basket of air fryer and evenly lay the potato wedges into it, trying to overlap as little as possible. Work in batches if your basket is smaller.
  • Set the air fryer to 390°F and cook for 8 minutes. Remove the basket and flip the wedges, giving it a bit of a shake as well and place it back into the air fryer for another 5-7 minutes, or until desired crispiness is achieved.
  • Allow to cool for several minutes before serving.

Notes
