Sheet Pan dinners like this oven baked chicken fajitas recipe may very well be the best of the best when it comes to simple dinners.

They are dinners that do not require you to hang out by the stove the entire time you are cooking. With a toddler, that is key. I cannot cook at the stove and chase after Sam at the same time. I promise, it cannot be done.

Tossing everything into the oven and then playing with cars and legos and everything in between as dinner is cooking is brilliant, and really a life saver.

If you spend enough time around here, you will see there are a lot of sheet pan dinner options: Parmesan Crusted Steak, Honey Garlic Chicken, and Sheet Pan Nachos to name a few.

The other incredible thing about these fajitas is that I can prep everything early in the day and let the chicken soak in the marinade and then pop it all in the oven 15 minutes before dinner.

That is right–these baked fajitas take 15 minutes to cook!

Sounds like a dream, but it is reality. I love this recipe for when I need a super quick dinner that I can have ready in no time.

How to make this recipe:

  • Chop the veggies and cut the chicken into thin slices–I use kitchen scissors to cut mine.
  • Whisk together the honey, lime, olive oil, spices, salt and pepper. I typically use anywhere from 1/4 to 1/2 tsp sea salt. Flavor to your liking. Also, if you are not a fan of heat, you can skip the cayenne pepper. (step 1)
  • Add the chicken strips and toss to coat evenly. (steps 2 and 3)
  • Toss in the chopped vegetables and toss to combine and coat as well. Feel free to chill for at this time until ready to cook if you are meal prepping. (steps 4 and 5)

  • Spread the chicken and vegetables onto a sheet pan and try to make one even layer. It is okay if chicken or veggies are touching each other on the sheet pan, but try to make it just one layer if possible. (step 6)
  • Bake for 15 minutes or until chicken reaches an internal temperature of 165°F. Allow to sit for about 5 minutes before serving with your favorite fajita toppings! (step 7)

Notes:

  • These baked chicken fajitas are GREAT to make ahead and then pop in the oven when you are ready to make dinner. Slice up the chicken and veggies and then toss everything into a plastic bag with spices, lime juice and oil and let it sit all day for even better flavor and more juiciness!
  • The great thing about this kind of recipe is that it is far from a one size fits all kind of dinner. Serve it over rice, in fajitas, over a salad, etc. Switch up the fixin’s that you toss on top every time for a bit of newness each and every time you make it. The kids are sure to be happy with the ability to make something fun every time–the adults too!

What to serve with these fajitas:

  • The answer may be what doesn’t go well with these baked chicken fajitas! Ha! For starters: toppings! Shredded cheese, cilantro, sour cream or plain Greek yogurt, sliced avocado, tomatoes, a squeeze of lime. What else friends??
  • Chips and dip is always a great side dish option for fajitas. This Spicy Mango Guacamole is one of our favorites. Or a 3 Bean Cowboy Caviar if you would like!
  • Black beans and rice, cilantro lime rice–rice of any kind really!

Honey Lime Sheet Pan Chicken Fajitas

Total Time: 25 minutes
Servings: 4

Ingredients 

  • 1.5 lb chicken breast
  • 2 bell peppers, any color
  • 1 onion
  • 3 T olive oil
  • Juice of 1 lime
  • 1 T honey
  • ½-1 tsp smoked paprika
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic
  • ¼ tsp cayenne pepper (optional)
  • ½ tsp pepper
  • Sea salt, to taste

Instructions 

  • Preheat oven to 400°F.
  • In a medium bowl, whisk together olive oil, honey, lime juice and spices. 
  • Cut chicken into thin strips. Slice onion and peppers into thin strips as well. Place chicken into bowl that contains whisked marinade. Stir to coat well and evenly.
  • Add peppers and onions and continue to mix so that they are coated as well. Spread evenly over sheet pan. (If meal prepping or marinading, place in fridge until ready to cook.)
  • Bake for about 15 minutes or until chicken is 165°F internal temperature. In the last several minutes, place tortillas wrapped in foil in the oven to heat as well. Remove from oven and absorb any excess liquid on the pan with a paper towel.
  • Serve with your favorite fajita toppings and enjoy!
