Tis the season! If you don't have a holiday party or gathering this weekend then I imagine the rest of December you will. Let the games begin, right?
With all of the partying and festivities comes lots of food. I swear all through December I spend more time making snacks and treats than I do eating them. (Ok, that's probably an exaggeration--I eat plenty of treats all season long.)
Every party you get ready to head out to and all the parties you have to host come down to one big question:
What will I make for everyone to eat?
Sure grabbing an app from the store sounds tempting when there is a time crunch, I get it. The truth is, there are quite a few options out there that require very little hassle and taste so much better homemade.
Crostini recipes are where it's at in my honest opinion. They are so versatile and the options are endless. Add some cheese and a few other ingredients and you have a simple, fancy hors d'oeuvre. This Warm Brie Crostini Recipe with Cranberry Chutney looks extra fancy, but when it comes to all of my recipes, simple is key. So you better believe this is easy as pie. (To be fair, I don't think pie is that simple to make, so let's say easy as 1, 2, 3 instead!)
My mother in law makes a delicious cranberry chutney every holiday season. It is one of my favorites, aside from the stuffing, from our holiday meal together.I think our first Thanksgiving together when Anthony and I started dating was the first time I had even heard the word, "chutney."
What is chutney, you ask?
It is essentially just like cranberry sauce but usually with a touch of spice as well as other fruits added in. My mother in law adds mandarin orange slices to hers as well as some chopped pecans. It's just perfection.
The first time I made cranberry sauce, I couldn't believe how simple it was to make. Thus, cranberry chutney is so easy as well. This chutney starts with Simply® Cranberry Cocktail, fresh cranberries, apples, a hint of cinnamon and brown sugar. When you add it to a piece of toasted baguette with melted brie, add some chopped pecans and orange zest--you are WINNING as this year's holiday host.
What’s even better? There will be some leftover chutney for you to add to other recipes as well! No complaints on this kind of leftover from me.
Like I said, SIMPLE is best. For this appetizer, make the chutney ahead of time, whenever is most convenient for you. It tastes even better when it has had a day or so to sit and allow all the flavor to really sink in. Then all you have to do before the guests arrive is melt the brie over the bread and top them off with the chutney. A sprinkle of orange zest and pecans adds to the beauty of these little bites as well!

Warm Brie Crostini Recipe with Cranberry Chutney
- 1 baguette (approx. 12 oz.)
- 5-6 oz. Brie
- 1-2 T olive oil
For the Chutney:
- ½ c Simply Cranberry Cocktail
- ¼ c apple cider vinegar
- 1 12 oz. package fresh cranberries
- ¾ c brown sugar
- 1 apple small diced
- ½ c golden raisins
- zest of one orange
- dash of cinnamon (more to taste)
- ¼ c chopped pecans
- rosemary sprig
- extra orange zeet
- In a sauce pan, combine all ingredients except for pecans (add these when serving) for the chutney and stir. Bring to a boil on medium high, stirring occasionally until cranberries begin to pop. Reduce the heat to low and allow to heat for approximately 15 minutes or until thick. Transfer to a bowl and chill until cooled. You can make the chutney 1-2 days ahead of time.
- For crostini, start by preheating oven to 375°F.
- Slice baguette on a diagonal about ½ in. thick. Place on a parchment lined baking sheet and spread olive oil evenly onto each slice.
- Add slices of brie to each piece of bread.
- Bake for about 5-7 minutes or until Brie is melted. Remove from oven and add a spoonful of chutney to each and sprinkle with pecans, orange zest and a sprig of rosemary if desired.
- Serve immediately.
