Breakfast is a no brainer for me. I have to have it. But I also love it to be ready for me when I get up. Overnight Oats are one way of doing this. Baking up a big pan of this banana bread baked oatmeal is another simple and delicious option.

Why We Love This Banana Bread baked oatmeal

  • it uses up ripe bananas
  • it’s as easy as stir and bake
  • it warms up easily as leftovers

I know that sitting down to breakfast as a family is not always something we have time for anymore. But when breakfast prep is a piece of cake to throw together, that helps, right?

And, even if everyone is in a hurry in the morning, the cinnamon lingering in the air as this banana baked oatmeal is cooking will make them stop, and maybe even sit for a minute or two.

Ingredient Notes

  • rolled oats: also called old fashioned oats. Gluten free oats will work well in this baked oatmeal recipe as well. I have not tested this recipe with quick oats so I cannot say how those would work.
  • ripe bananas: make sure the peels are nice and brown and the bananas are super soft.
  • milk: use your favorite milk. Regular dairy milk or a dairy free milk like almond milk or heck, even oat milk is great
  • egg: the egg will help bind it all together in this recipe.
  • chopped nuts: these are optional. I like to toss them on top before putting this baked oatmeal in the oven.

Ways To Vary This Recipe

  • add some extra protein: you can add a bit of Greek yogurt or a few spoonfuls of your favorite protein powder to the mix. If you add some protein powder, just add the same amount in extra milk to balance it.
  • add chocolate chips: I have stirred in chocolate chips happily at times but white chocolate chips are my favorite add-in!
  • use honey instead of maple syrup to vary the flavor
  • use more warm spices than just cinnamon. You can add a pinch of nutmeg, ginger, cloves or allspice!
  • throw in some dried cranberries or raisins

Recipe Tips

Even though you slice this up, it’s still more or less a dish that you eat with a fork or spoon. So take full advantage of that with all the delicious garnishes: yogurt, maple syrup, whipped cream, you name it!

Make sure not to over bake this banana bread oatmeal–that will dry the center out a bit and make the texture a bit overly chewy. Bake until the edges are golden brown and the top is set and you don’t see any liquid.

Storage

Store this baked oatmeal in the in an airtight container for about to 5 days. You can also store it in the freezer for up to 3 months in a freezer safe container.

Banana Bread Baked Oatmeal

Instructions 

  • Preheat oven to 350°F.
  • In a mixing bowl, mash the bananas. Add in melted butter and whisk. Add the eggs, brown sugar, vanilla and whisk. Add the milk and cinnamon and whisk to combine. (you could technically add all of these at once, but I like taking it a few at a time!)
  • In a small bowl, stir together baking powder, oats and salt. Pour into the the wet mixture and stir to combine. Stir in the pecans.
  • Pour into a greased or parchment lined 9X9 baking pan. Bake for about 30-35 minutes or until the edges just start to brown.
  • Remove from oven and let cool.
  • Serve with a drizzle of maple syrup, a dollop of vanilla yogurt or with a few banana slices on top.
