Apple season is the best season and I am so happy to eat all of the gooey and delicious apple cinnamon treats, especially this super simple cinnamon apple biscuit bake.

Fall recipes just get us all in a way that nothing else can, right? And this new one is just so so good!

Why We Love This Apple Cinnamon Biscuit Bake

Ok, is this a breakfast recipe or a dessert recipes? I mean, it’s fruit and biscuit dough so shouldn’t that be breakfast?! This sort of monkey bread inspired treat is as easy as dumping and stirring, but the payoff is tenfold. We for sure have had it with some vanilla ice cream on top but no doubt, this one could be a fall brunch regular as well!

This apple biscuit bake:

  • gives all the apple pie flavor with minimal effort
  • is so gooey and cozy–when the biscuit mixture bake up in the brown sugar and butter it makes the most amazing caramelized goodness at the bottom of each piece!
  • is loaded with buttery cinnamon apples for fall
  • can easily be a festive holiday breakfast but is also easy enough that it can be a just because fall recipe too!

Ingredient Notes

  • Use your favorite apples for this biscuit bake. We love Gala apples and Fuji apples and are not big fans of the classic Granny smith so rarely have them on hand. Use what you love for the best bake! I also don’t remove the apple peels because I am too lazy, but you are welcome to do so!
  • I prefer the Pilsbury Grands Southern Homestyle Buttermilk Biscuit dough the best and that is what I typically use. You can use another variety or brand of refrigerated biscuit dough.
  • Use unsalted or salted butter when making this recipe. You can lessen the butter a touch if it feels like too much for you, but we love the gooey, golden caramelized bottoms of the biscuits that it adds so wouldn’t go less than about 6 tablespoons.

Ways To Vary This Recipe

  • add some spice to the icing glaze: feel free to add some cinnamon or nutmeg to the brown sugar and cream cheese icing mixture.
  • make them into muffins: add a spoonful of the mixture and add to a greased muffin tin. Bake time will be less, so just keep an eye on them

Step-By-Step Instructions

Step 1: Add the melted butter, brown sugar, maple syrup, vanilla and cinnamon to the bottom of a 9×9 inch baking pan and stir to combine.

Step 2: Add the apples and stir to evenly coat.

Step 3: Add the pieces of biscuit dough, and gently fold to allow the biscuits to be coated with the apple and cinnamon mixture, especially on the top as much as possible.

Step 4: Bake for about 30-40 minutes or until the top of the biscuits are golden brown. It can be hard to tell if the biscuits are cooked, so make sure the center of the biscuits reach 177°F. I like to test several spots.

Step 5: Remove from the oven and allow to cool for 5-10 minutes. While it cools, use a fork to press the cream cheese enough that it can be easily mixed. Add the brown sugar and whisk. Add in the milk and whisk to desired thickness.

Step 6: Drizzle over top of the apple biscuit mixture.

Recipe Tips

Not sure if the centers of the biscuits are cooked? Check the internal temperature. The center of the biscuits need to reach 177°F to be safe to eat. Check several larger pieces, especially where they may be connected to another biscuit.

You are welcome to add the biscuits first and then pour the apple mixture over top for another way to vary this recipe.

Storage

This apple cinnamon biscuit bake is best eaten fresh but can still be stored for about 3-4 days in the refrigerator in an airtight container. You can reheat it in the microwave for about 90 seconds, or bake for about 10-15 minutes at 350°F.

To freeze, allow it to cool completely and then store in a freezer-safe container for up to 3 months. Thaw in the refrigerator before reheating.

Ingredients 

  • ½ cup butter, melted, (can use 6 tbsp if preferred)
  • 1 cup brown sugar lightly packed
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp cinnamon, more if desired
  • 2 small apples , small diced
  • 1 can refrigerated biscuits (8-count) , each cut into about 4-6 pieces

Brown Sugar Icing

  • 4 oz. cream cheese, softened
  • 3-4 Tbsp brown sugar
  • 2-3 tbsp milk

Instructions 

  • Preheat oven to 350°F. Add the melted butter, brown sugar, maple syrup, vanilla and cinnamon to the bottom of a 9×9 inch baking pan and stir to combine. Add the apples and stir to evenly coat. I like to add a pinch of sea salt sometimes, too
  • Add the pieces of biscuit dough, and gently fold to allow the biscuits to be coated with the apple and cinnamon mixture, especially on the top as much as possible.
  • Bake for about 30-40 minutes or until the top of the biscuits are golden brown. It can be hard to tell if the biscuits are cooked, so make sure the center of the biscuits reach 177°F. I like to test several spots.
