Usually I share sheet pan dinner recipes, but today it’s a simple, cozy protein sheet pan pancake, and you are going to LOVE it!

It’s amazing how easy it is to whip up some batter, pour it on the pan and bake. You get light, fluffy pancakes without standing over the hot stove! Winning!

Why We Love These Apple Cinnamon Sheet Pan Pancakes

I think we all become very fixated on fall recipes the minute we see that September is just around the corner. That means school is back in session too. When I have school on the brain, I think of easy breakfast recipes for busy mornings. This make-ahead recipe is just that!

These sheet pan apple cinnamon pancakes:

  • are very easy to prepare
  • can easily be frozen for up to 3 months so you can grab them on mornings when you need something quick or on the go
  • have cozy fall flavors but also give you a protein boost for some morning fuel
  • are so kid-friendly! Even my picky 8-year old loved them and he is hard to please

Ingredient Notes

  • Use your favorite kind of apple in this recipe as you won’t be baking the pancake long enough for any particular apple to fall apart or become overly mushy. We typically use fuji apples or gala, but honeycrisp are great and for a more tart option, opt for Granny Smith apples.
  • The same goes for the protein powder you use in this sheet pan pancake recipe. If you don’t love it as a shake or in other recipes, you won’t love it here either. If you find a good cinnamon protein powder, let me know as I think that could be good in this recipe, or even a salted caramel flavor! I like Clean Simple Eats vanilla protein powder, but it’s pretty pricey so it’s not top on my list for that reason.
  • You can use white whole wheat flour in place of some or all of the all purpose flour to add some more whole grains to this sheet pan apple pancake. A 1:1 gluten-free baking flour should also work.
  • Using room temperature ingredients in this recipe will make for the best batter overall as the ingredients will mix together without clumping from differences in temperature.

Ways To Vary These Apple Sheet Pan Pancakes

  • add something fun on top: add some cinnamon and sugar over top before baking for a crunchy top or add an icing drizzle like this cinnamon icing!
  • add more spice: you can certainly add more warm spices like cloves, ginger, allspice, etc. I wanted to keep this one simple on ingredients so kept it at cinnamon and a little touch of nutmeg.

Step-By-Step Instructions

Step 1: Add the cinnamon apple ingredients to a small bowl and toss to combine. Set aside. In a separate bowl, whisk together the flour, protein powder, baking powder, cinnamon and salt.

Step 2: Add the eggs, milk, brown sugar, greek yogurt, butter and vanilla to a medium bowl and whisk well until combined.

Step 3: Add the dry ingredients to the wet ingredients and stir only until combined and there are no flour streaks. Make sure not to over mix this.

Step 4: Gently fold in the apples.

Step 5: Grease a 10×15 inch sheet pan very well (also called jelly roll pan, you can use a 9×13 inch pan if you don’t have one and bake a touch longer). Pour the apple cinnamon pancake batter and spread evenly on the pan.

Step 6: Bake in preheated oven for about 14-18 minutes, or until the edges are golden, the center is set and a toothpick comes out of the center clean.

Recipe Tips

If you aren’t a fan of protein powder, you can omit the protein powder and replace it with about 1/2 cup more flour. I would add the flour in slowly, about half at a time to make sure it doesn’t get too thick.

It’s better to slightly undercook versus overcook these sheet pan pancakes. They will still bake a touch more after you pull them out of the oven so you are less likely to end up with dry texture.

Don’t over mix the batter. Once you add the dry ingredients, stir only to get the mixture combined and no flour streaks remain. Over stirring can cause the pancake rubbery and chewy versus more light and fluffy.

Storage

Store these apple sheet pan pancakes for up to 5 days in a sealed, airtight container. To freeze, allow the pancakes to cool completely. Flash freeze them for an hour in a single layer for best results and then transfer to a freezer-safe bag or container.

Reheating from the fridge is as easy as heating in the microwave for about 30 seconds. To reheat from frozen, wrap them in a paper towel and heat for 30 seconds, flip and heat for another 30 seconds, or more until warmed.

Ingredients 

Cinnamon Apples

  • 3 small apples
  • 1 Tbsp maple syrup
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • pinch of sea salt

Pancake Mixture

  • 1 ⅓ cups flour, spooned and leveled
  • ½ cup plus 2 Tbsp vanilla protein powder
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • ½ tsp salt
  • 2 large eggs*, room temperature
  • 1 cup whole milk*, room temperature
  • 3 Tbsp brown sugar
  • ½ cup Greek yogurt*, room temperature
  • 2 Tbsp melted butter, slightly cooled
  • 1 tsp vanilla extract

Instructions 

  • Preheat oven to 350°F. Add the cinnamon apple ingredients to a small bowl and toss to combine. Set aside.
  • In a separate bowl, whisk together the flour, protein powder, baking powder, cinnamon and salt.
  • Add the eggs, milk, brown sugar, greek yogurt, butter and vanilla to a medium bowl and whisk well until combined. Add the dry ingredients to the wet ingredients and stir only until combined and there are no flour streaks. Make sure not to over mix this.
  • Fold in the apples. Grease a 10×15 inch sheet pan very well (also called jelly roll pan, you can use a 9×13 inch pan if you don't have one and bake a touch longer). Pour the apple cinnamon pancake batter and spread evenly on the pan.

  • Cool for about 5 minutes before slicing and serving. Refrigerate or freezer leftovers (see notes for more details.)

Notes

*Using room temperature eggs, milk and greek yogurt will help the mixture stay smooth when combined, especially with the melted butter. If the mixture does start to clump a bit when mixing the wet ingredients, you can pop the bowl in the microwave for about 10 seconds or so and then whisk until smooth.
