Ingredients Notes

Get the full list of ingredients with exact measurements below in the recipe card.

Puff pastry sheet, apricot jam, goat cheese and other ingredients on surface.
  • puff pastry: Different puff pastry packages come in sheets that vary in size. I used Pepperidge Farm puff pastry to make these. You can easily double this recipe by using the whole package. If you really want to challenge yourself and make your own puff pastry, give it a shot! Also, give these puff pastry mini quiches a try if you love puff pastry!
  • apricot jam: I started out wanting to make these apricot brie puff pastry bites but then wasn’t much a fan of the apricot jam. II LOVE making these with a blueberry jam as well. Brie is so perfect paired with any fruit flavor in my opinion!
  • You can use regular honey if you aren’t a fan of hot honey, or if you don’t have any on hand. The hot honey adds an amazing pop of flavor that can’t be matched!

Ways To Vary This recipe

  • vary the jam: I love love love these with apricot jam, but they are also amazing with cranberry sauce, wild blueberry jam, fig jam and more.
  • vary the herbs: you can use chopped rosemary, oregano, etc.
  • use an egg wash–I did not add this to the original recipe to make the need for one less step but brushing with an egg wash can add that nice glossy look to the puff pastry.
  • use a different cheese: if you aren’t a fan of goat cheese, you could use something else like cream cheese or add feta–amazing whipped like in these Bacon Wrapped Stuffed Dates

Step-By-Step Instructions

Sheet pan with parchment paper with puff pastry squares arranged.

Step 1: Roll out thawed puff pastry and slice into 9 equal pieces–if you are using Pepperidge Farm, the pieces will be about 3.5 inches by 3.25 inches–they don’t have to be perfectly equal. If you use the Jus Roll brand, the sheet is slightly longer, you can cut it into 12 pieces and balance the ingredients. Place the pieces on a parchment paper lined baking sheet and Score each piece to make about a roughly 1/2 inch edge.

Step 2: Spread softened goat cheese into the center of each piece of pastry.

Step 4: Bake for about 15 minutes or until puff pastry is golden brown and sprinkle with thyme leaves and a drizzle of hot honey. Cool for several minutes before serving.

Recipe Tips

You can prep these in advance. Allowing these puff pastry bites to chill before baking is ideal. 30 minutes is fine, but you can make these up to 3 days in advance and then pop them in the oven when you are ready to bake.

You can brush the edges using an egg wash if preferred for a shiny, glossy looking puff pastry. Whisk together an egg with about a tablespoon of water and brush with a pastry brush around all of the edges.

Storage and Reheating

For best overall texture, eat these puff pastry tarts fresh from the oven. However, you can store them in an airtight container in the refrigerator for about 2-3 days.

You can cook and freeze these for about 3 months. Allow them to cool completely and then transfer them to a freezer-safe container. Bake from thawed versus frozen for optimal goat cheese texture.

To reheat, you can bake them for about 10 minutes at 350°F loosely covered in foil.

A couple minutes in an air fryer would work as well at 350°F. You could microwave them but you would not have the same crispy flakiness as you would with other reheating options.
