Apricot Goat Cheese Puff Pastry Tarts

If you need a simple appetizer, these apricot goat cheese puff pastry tarts are a must make. Only about 10 minutes to prep and baked in about 15 minutes--the entire recipe is ready in under 30 minutes! This appetizer looks beautiful on a spread of dishes but takes such little effort to make--and tastes so delicious!

Ingredients

  • 1 sheet puff pastry dough
  • cup apricot jam or preferred flavor jam
  • 3-4 oz goat cheese softened
  • ¼ cup chopped walnuts
  • 1 Tbsp thyme leaves
  • hot honey

Instructions

  • Preheat oven to 400°F.
  • Roll out thawed puff pastry and slice into 9 equal pieces–if you are using Pepperidge Farm, the pieces will be about 3.5 inches by 3.25 inches–they don’t have to be perfectly equal. If you use the Jus Roll brand, the sheet is slightly longer, you can cut it into 12 pieces and balance the ingredients. Place the pieces on a parchment paper lined baking sheet and Score each piece to make about a roughly 1/2 inch edge.
  • Spread softened goat cheese into the center of each piece of pastry.
  • Spoon the apricot jam over top of the goat cheese and sprinkle with chopped walnuts. (You can brush the edges of the puff pastry with an egg wash--an egg whisked with a tablespoon of water-- for a glossy look).
  • Bake for about 15-20 minutes or until puff pastry is golden brown and sprinkle with thyme leaves and a drizzle of hot honey. Cool for several minutes before serving.

Notes

You can prep these in advance. Allowing these puff pastry bites to chill before baking is ideal. 30 minutes is fine, but you can make these up to 3 days in advance and then pop them in the oven when you are ready to bake.
You can brush the edges using an egg wash if preferred for a shiny, glossy looking puff pastry. Whisk together an egg with about a tablespoon of water and brush with a pastry brush around all of the edges.
Storage: For best overall texture, eat these puff pastry tarts fresh from the oven. However, you can store them in an airtight container in the refrigerator for about 2-3 days. You can cook and freeze these for about 3 months. Allow them to cool completely and then transfer them to a freezer-safe container. Bake from thawed versus frozen for optimal goat cheese texture.
Reheating: To reheat, you can bake them for about 10 minutes at 350°F loosely covered in foil. A couple minutes in an air fryer would work as well at 350°F. You could microwave them but you would not have the same crispy flakiness as you would with other reheating options.
