Why We Love This Ground Turkey Egg Roll Bowl

I am always looking for the quickest and easiest way to get dinner on the table. This turkey egg roll bowl is exactly that! A simple dinner recipe that is on the table in well under 30 minutes–winning!
This ground turkey egg roll bowl:

- takes less than 20 minutes to cook
- is so full of flavor
- is loaded with veggies and 30 grams protein per serving
We love this quick one-pot dinner and hope you do as well!
Ingredient Notes
See full list of ingredients below in recipe card with exact measurements.

- To make this a dinner recipe that requires minimal chopping, I use a cole slaw mix from the grocery along with extra shredded carrots. The entire bag of chopped cabbage slaw is used in this recipe but not all of the carrots–you are welcome to add more or toss them into your favorite salads and more!
- A typical egg roll doesn’t usually have sweet chili sauce or sriracha in it, but these are the flavor enhancers that take this simple dinner recipe to the next level in my opinion!
- I LOVE using ground turkey so I don’t have to drain any grease and it’s quite budget friendly, but you are more than welcome to use ground pork, ground beef or ground chicken as well!
Ways To Vary This Recipe
- add more veggies: feel free to add in some broccoli, peas, or other favorite veggies to this dish
- toss in an egg: scramble an egg and stir it in before serving for more protein and nutrients and flavor of course.
- double the meat: if you want a major protein packed meal, add more meat!
- add more spice: there is plenty with the sriracha, but you are welcome to double the sriracha, add some red pepper flakes and more
- add wonton strips for some crunch when serving
- make it with a squeeze of lime juice--I tested with and without and liked both but also wanted to minimize the recipe ingredients a bit so decided to omit it. Add it if you have limes available!
Step-By-Step Instructions

Step 1: In a large, flat bottomed sauté pan or skillet, heat a tablespoon of olive oil (or preferred cooking oil) over medium-high heat. Add the chopped whites from the green onions and sauté for about 1-2 minutes. Add the ground turkey to the pan. (I like to sprinkle garlic powder over my turkey while cooking.) Break the ground turkey into smaller chunks and cook until browned and no longer pink in the center. In the last minute of cooking the turkey, add the minced garlic and ginger and stir to heat.

Step 2: Add the cole slaw, carrots, soy sauce, and toss to combine. Cook for about 4-6 minutes to allow the carrots and cabbage to become tender, stirring frequently.

Step 3: Once cabbage and carrots are softened, shift to low heat. Add in the sriracha, sweet chili sauce, sesame oil, chopped greens from the green onions, and chopped cilantro. Toss to combine.

Step 4: Season with salt and pepper and add more soy sauce if desired for more moisture. Serve over rice, in lettuce wraps or as is!
Recipe Tips
If you are serving this egg roll bowl over rice, it makes 4 nice servings, but if you want this as a complete meal, it is more like 2-3 servings. We don’t do low carb in our house, so we always have it over rice, but everyone has different needs!
To make this gluten free, use tamari or liquid aminos. The soy sauce is the only ingredient in the recipe that contains gluten.
Storage
Store leftovers in an airtight container for about 3-4 days. You can freeze leftovers as well in a freezer-safe container for up to 3 months. Just make sure to allow it to cool completely before transferring to the freezer.
