Why You Will Love These Air Fryer Stuffed Mushrooms:

  • They only take about 20 minutes tops to make. Stuffed mushrooms are fairly easy to begin with, but the air fryer cuts the cook time by up to 75%! Only 5-7 minutes of cooking required and the recipe itself is pretty basic as well!
  • A perfect party appetizer. Just saying stuffed mushrooms feels fun and fancy. I don’t know many who would pass these up on the spread. The perfect, poppable one bite dish. Always welcome at the party.
  • Easy to customize. While these air fryer mushrooms are great as is; the recipe can really go in a lot of directions as you wish. Change up the cheese, add in some sausage or bacon, and much more. You can make them again and again and never have the exact same variation twice.
  • You can prepare these ahead of time. If you have a lot of planning and prepping for an event or party, you can knock one thing off of your list by getting these mushrooms all ready. On the big day, you can just pop them in the air fryer before serving.

Recipe Ingredients:

  • mushrooms: baby bella (also called cremini) mushrooms are ideal for stuffed mushrooms. White mushrooms work as well but I find the baby bellas to be more uniform in size when at the grocery so they will cook at the same rate. The stems pop out easily and there is plenty of space for all the stuffing in the cavity!
  • cream cheese: softened cream cheese in block form. You can use a lower fat cream cheese if desired, but full fat is the best.
  • breadcrumbs: you can use Italian seasoned breadcrumbs or regular. Gluten free will work fine as well. If using Italian seasoned breadcrumbs, cut the Italian seasoning later in the recipe by half.
  • parmesan: grated is ideal for these air fried stuffed mushrooms but shredded could work. You can also opt for pecorino, asiago, romano or a combination of any of these.
  • seasoning: garlic powder, Italian seasoning and a bit of salt and pepper
  • sun-dried tomatoes: while optional, the sun-dried tomatoes add a level of flavor that sets this recipe apart from the rest. Make sure you squeeze off any excess oil from the tomatoes and blot them pretty dry so the mushrooms aren’t greasy.

How To Make These Air Fried Mushrooms:

Combine all of the stuffing ingredients and stir. Adjust salt and pepper to taste. Adjust seasoning as well.

Wash the mushrooms and clean. Blot them dry and remove the stems.

Spray the basket of your air fryer with oil lightly or line it with parchment. Fill each mushroom generously with the cream cheese stuffing mixture. I like to pipe it in by transferring the mixture to a plastic bag and then cutting a hole in the tip. Makes for mess free mushrooms.

Air fry the mushrooms for about 5-7 minutes in a preheated air fryer at 350°F. Check the mushrooms around minute 4 and keep an eye about every minute or so after. Air fryers are not the same across the board and yours will cook differently from another!

Recipe Tips:

  • Air fryers are not all created equally. I have two different air fryers and this recipe cooks slightly faster in one verses the other. Keep an eye on the stuffed mushrooms after the first few minutes to avoid burnt mushrooms!
  • You can prepare this recipe in advance. Prepare the mushrooms up to about 2 days in advance and then pop them in the air fryer just before ready to serve!
  • Spray the tops of the stuffed mushrooms before air frying. Air fryers can certainly dry out certain foods. When the tops of the stuffing in these mushrooms were not sprayed prior to air frying, it tended to have a dry texture on top. Misting with some oil remedied this quite well.
  • These mushrooms can be baked if you don’t have an air fryer. Line a cookie sheet with parchment and arrange the mushrooms. Bake at 350°F for about 20 minutes or until the tops are golden.

Air Fryer Stuffed Mushroom Variations:

This air fryer stuffed mushroom recipe is a great base but there are some great variations or add-ins to make them all the more tasty. Consider the following:

  • add 1/2 cup chopped cooked bacon
  • stir in 1/3 cup thawed frozen spinach, drained and squeezed of any liquid
  • use a different kind of cheese in place of the parmesan: gruyere, ricotta, goat cheese, mozzarella, pecorino, and more
  • add some heat with diced jalapeño
  • add some meat–about 1 cup of your favorite browned sausage, ground beef, turkey, etc.

Storage:

These air fried mushrooms are definitely best served fresh but if you have leftovers, it’s ok! Store them for 3-4 days in the refrigerator in an air tight conainer.

You could freeze them, but I don’t suggest it. I find they don’t come out quite as well. You could freeze them if they are uncooked and have much better results.

To reheat: just pop them in the air fryer for a few minutes at 350°F and you should be set!

Instructions

  • Rinse and dry mushrooms and then remove stems. Combine remaining ingredients in a mixing bowl and stir to combine. Adjust seasoning as desired.
  • Spoon or pipe the stuffing into each mushroom (will depend on the size of the mushroom but about 2 teaspoons more or less in each). Spray the basket of the air fryer with oil. Arrange the mushrooms so they are not touching and mist the tops of with oil as well. (you can line the air fryer basket with foil or parchment and then spray if desired.)
  • Air fry for about 5-7 minutes or until the top of the stuffing is golden brown. You may need to work in batches if your air fryer is not large enough.
  • Remove from air fryer and sprinkle with freshly chopped parsley and serve immediately.

Notes

  • *The size of the mushrooms will impact the number of servings in this recipe. If your mushrooms are larger, you may not have enough filling to stuff all of them.
  • Air fryers are not all created equally. I have two different air fryers and this recipe cooks slightly faster in one verses the other. Keep an eye on the stuffed mushrooms after the first few minutes to avoid burnt mushrooms!
  • Use the sun-dried tomatoes in oil for this recipe. You want the soft tomatoes in oil and I love the ones in herbs for great Italian flavors. Just try to remove the oil as best you can or it goes everywhere!
