I am so excited to bring you this recipe today! Partnering with Prego®+ is a dream since I grew up with them and now get to feed Sam all the delicious sauces as well.

Prego®+ Hidden with Super Veggies is my new favorite thing for my little one who has decided that mac and cheese, pb and j and pizza are the only things that fit into his diet.

Who doesn’t love pizza, right? This new recipe for Hidden Veggie Packed Mini Pizzas is a great way to have some family fun, and get a good veggie packed meal–even if they have no idea that they are eating lots of vegetables.

We are all about balance in our house and Sam explores any and all foods and has since he was 6 months. He currently has dwindled his “acceptable vegetable list” down to carrots, peas and green beans. So any creative way to squeeze some more into him is always a bonus to me!

Sweet potatoes, carrots, cauliflower, spinach, butternut squash, and roasted red peppers, oh my! All of this goodness is blended into this perfectly smooth and delicious sauce. And it makes a great sauce for pizza, pastas and more.

For an added bonus, I snuck in some whole wheat flour into this yeast free pizza dough. Why not go for a grand slam off the bat? Soft and chewy, and ready in 10 minutes. What more could you ask for?

The current state of things has made grocery shopping in store a thing of the past. Thankfully, you can still pick up this veggie packed pasta sauce with Kroger pick up. The new norm for us is to pic up our weekly groceries versus browsing the aisles, but it makes life so much easier for us!

Our local Kroger is on top of things and have so many lanes now for their pick up that we never have to wait. And we all know toddlers do NOT do waiting very well at all.

Grab a jar of the Prego® you know and love and get the whole family ready for a fun and veggie filled pizza night!

What you need to make this recipe:

How to make this recipe:

  • In a medium bowl, combine the flours, sea salt, baking powder and sugar. Whisk to fully combine. (steps 1 and 2)
  • Whisk together 3/4 cup of water and olive oil to combine. Slowly add the water and olive oil mixture into the flour mixture and stir or use your hands to combine. Add in the extra water a tablespoon at a time until all of the flour is moistened and pulled into the dough. This mixture shouldn’t be sticky but should pull together. (steps 3 and 4)

  • Using your hands, start to bring the dough together. If it feels too dry you can still add a touch of water. (step 5)
  • Move the dough to a lightly flour dusted surface and knead the dough 10 – 15 times. (step 6)
  • Form the dough into 4 equal balls and roll the balls out with a rolling pin to about 1/4 inch thickness or desired thickness. The dough does rise so if you don’t want it too thick, 1/4 inch should do the trick. Place the dough onto a parchment lined baking sheet and use a fork to poke holes into the dough. (steps 7 and 8)

Bake the dough for 6 minutes before adding any toppings. Remove the dough, add the sauce–lay it on nice and thick!

Time to add the cheese and toppings and then bake! Whatever toppings you love are perfection!

Notes:

  • Add some herbs on top of the cheese if desired. I can do that for mine, but the little guy turns his nose up to anything not cheese so I skip it for him.
  • You can omit the whole wheat flour and just use white flour if you don’t have any.
  • If you need to add more water, do it about a tablespoon at a time versus dumping 1/4 cup. If you do add too much water, add a touch of flour to balance it out.

Hidden Veggie Packed Pizzas

Family pizza night will be so fun and delicious with these simple whole wheat and veggie packed pizzas–but the kids won't even know! Everyone can have fun making this simple, yeast free pizza dough and adding the toppings they love.

Ingredients 

For the Dough:

  • ¾ – 1 c Prego®+ Hidden with Super Veggies
  • 1 ½ c shredded mozzarella
  • other favorite pizza toppings: pepperoni, green pepper, mushrooms, and more

Instructions 

  • Preheat oven to 400°F. In a medium bowl, combine the flours, sea salt, baking powder and sugar. Whisk to combine. In a small bowl or cup, whisk together 3/4 cup of the water and olive oil to combine.
  • Slowly add the water and olive oil mixture into the flour mixture and stir or use your hands to combine. Add in the extra water a tablespoon at a time until all of the flour is moistened and pulled into the dough. This mixture shouldn't be sticky but should pull together.
  • With your hands, start to bring the dough together. If it feels too dry you can still add a touch of water. Transfer the dough to a lightly floured dusted surface and knead the dough 10 – 15 times. Divide the dough into 4 equal balls and roll the balls out with a rolling pin to about 1/4 inch thickness or desired thickness.
  • Place the dough onto a parchment lined baking sheet and use a fork to poke holes into the dough. Bake the dough without any toppings for 6 minutes.
  • Remove the pan from the oven and spread the sauce on top of each pizza. Top with cheese and then additional toppings as desired. Bake the pizzas for another 10-12 minutes or until golden brown edges. Cool for several minutes before digging in!
