Chocolate Protein Overnight Oats with Magic Shell

These rich and delicious chocolate protein overnight oats are the best make-ahead breakfast for a nutritious breakfast waiting for you in the morning. One serving packs in over 25 grams of protein, and tips for adding even more protein are included. Make it a fun treat with an irresistible chocolate shell topping!

Ingredients

  • ½ cup rolled oats
  • ½ cup plus one Tbsp chocolate protein drink or use 1/2 cup plus 1 Tbsp milk and about 2 Tbsp chocolate protein powder
  • 1 heaping tsp cocoa powder
  • 1 tsp chia seeds optional
  • 1-2 tsp maple syrup adjust to taste
  • 2 Tbsp Greek yogurt vanilla or plain
  • ½ tsp vanilla extract
  • 2-3 cranks sea salt

Optional magic shell

  • 1 tbsp choc chips
  • ½ tsp coconut oil

Instructions

  • Add all of the ingredients for the overnight oatmeal into a small bowl or jar and stir.
  • If adding the magic shell: refrigerate for about an hour to allow it to set up a bit and then melt the chocolate chips and coconut oil in 15 second increments, stirring in between and pour over the top of the oats to make a thin shell. Cover and seal the container and refrigerate for at least 4-6 hours but ideally overnight. If planning to eat this recipe warm, I don't recommend adding the shell.
  • No magic shell: refrigerate for about 4-6 hours, but ideally overnight. Give the oats a stir and add an extra splash of milk before serving. These can be eaten hot or cold.

Notes

If you want to eat these warm, I suggest skipping the magic shell. Instead, you can stir in chocolate chips, or drizzle the melted chocolate chips over top of the oats and stir them in.
Use a chocolate protein powder or drink that you like or you will very likely not enjoy these chocolate protein overnight oats. You can use another chocolatey flavor if preferred such as chocolate peanut butter, mint chocolate, etc.
Storage: Store these overnight oats for up to 5 days in an airtight container in the refrigerator. Add an extra splash of milk if needed when serving if too much liquid has been absorbed.
