Blueberry Lemon Energy Bites

These quick and easy no-bake blueberry lemon energy balls are the perfect refreshing, nourishing snack. 7 Ingredients, naturally sweetened with dates, and super simple to vary. Take them on the go with you or have them on hand to snack on when you want something citrusy that will also fuel you through your day!

  • In a food processor, process cashews until fine and grain like.
  • Add lemon zest, lemon juice, dates, vanilla and sea salt. Process until a dough starts to form. Stir in dried blueberries.
  • Roll into bite sized balls. (If using a 1½ Tbsp cookie scoop, you will get approx. 16-18 balls)
  • You can chill for about 15-30 minutes to allow them to set a bit more but feel free to dig right in!

Notes

Storage: Store these in an airtight container at room temperature for about 3-4 days, in the refrigerator for 2 weeks or freeze them for about 3-4 months.
