Preheat oven to 350°F.
In a bowl, mix together brown sugar, lemon juice, apples, cinnamon and corn starch and mix to combine. Set aside.
In a separate bowl, combine oats, flour, brown sugar, cinnamon, sea salt, and baking powder and whisk together.
Add in melted butter and vanilla and stir to combine. Mixture will be somewhat crumbly, and that is ok.
In an 8x8 in. pan, lined with parchment, press ⅔ of the oat mixture firmly into the pan. Add the apple mixture on top to cover evenly. You can peel your apples or leave the skin on, whatever you prefer!
Sprinkle over the rest of the oat mixture to cover the berries.Place in the oven and bake for 30-35 minutes or until the crumble topping is golden brown. Allow to cool completely before cutting. Enjoy! Store in an air tight container at room temperature or in the refrigerator for about 4-5 days.
