Whisk together eggs and milk well. Add vanilla and maple. Whisk well.
Pour cereal into a medium bowl and set aside.
Heat griddle to medium. Dip each slice of bread into egg mixture and allow entire slice to coat, making sure to get the edges of the bread really well.
Roll the 4 edges of the bread in the cereal to cover. Place on lightly greased griddle and cook each side for about 3-4 minutes each side or until browned to your desired darkness.
Repeat with the rest of the bread and serve with extra cereal on top!
