Simple Slow Cooker Lentil Chili

Ingredients

  • 1/2 c onion diced
  • 1 red pepper diced
  • 1 green pepper diced
  • 1 1/4 c dry green lentils rinsed
  • 1 can or 2 cups kidney beans precooked and rinsed
  • 1 can or 2 cups diced tomatoes
  • 1 can tomato sauce
  • 1/2 - 3/4 c vegetable broth
  • 2 T tomato paste
  • 1 T chili powder
  • 1 T cumin
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 2 - 3 garlic cloves minced
  • 1/8 - 1/4 tsp crushed red pepper
  • sea salt and pepper to taste

Instructions

  • Add all ingredients except for the tomato paste into slow cooker.
  • Cover and set to high heat for 4-6 hours or until lentils are tender or on high heat for about 6-8 hours.
  • About 15-30 minutes before serving, add in the tomato paste. This will thicken the chili. If it becomes too thick, add more broth to balance.
  • Serve with your favorite chili toppings!

Notes

You could use precooked lentils to make this recipe much quicker! You would only have to cook for about 2-4 hours.
