Toasted Cashew + Chocolate Chip Granola Bars

  • 1 1/2 c raw cashews
  • 1/2 c raw pecans
  • 1 T flax seeds
  • 1/2 c cashew butter
  • 1/2 c rolled oats regular or gluten free (heaping)
  • 1 tsp vanilla extract
  • 1-2 T mini chocolate chips
  • 2-3 T pure maple syrup
  • 6 medjool dates pitted
  • 1/8 tsp Sea salt


  • Toast cashews and pecans about 7-10 minutes at 350°F or until a light golden brown.
  • In a food processor, process dates until thick and paste like.
  • Transfer dates to mixing bowl.
  • In food processor pulse to chop cashews and pecans.
  • In sauce pan melt cashew butter, maple, and vanilla on low until combined and smooth.
  • Combine all other ingredients in mixing bowl with dates and then add nuts and cashew butter mixture. Stir to combine.
  • Press mixture FIRMLY into a pan lined with parchment paper. (An 8x8 should work, it may not take up the entire pan though.)
  • Chill for about one hour before cutting.
