  • 1 cup raw pecans
  • 1 cup raw almonds
  • 13-15 medjool dates pitted
  • 3/4 cup shredded coconut unsweetened
  • 1 tsp vanilla extract
  • 2 T cacao powder
  • 3-4 Cranks or sea salt

  • 1/4 cup dark chocolate chips
  • 1 T unsweetened almond milk

  • In a food processor, process almonds and pecans until a fine, grain like texture.
  • Add all other ingredients and process until a dough begins to form. (If it seems to be a bit dry, add a tsp of water or so and process until the dough forms.)
  • Roll dough into bite sized balls and chill for about 15-20 minutes before serving.
  • Optional: If using chocolate drizzle, melt milk and chips together and stir vigorously. Transfer to a plastic baggie and cut a small slit in the corner. Drizzle over each ball. Allow to chill for about 10-15 more minutes.

If you use cacao instead of cocoa powder, it can be somewhat more bitter. You can add some more dates or some chocolate chips to sweeten up if you prefer!
