Street Corn with Garlic Feta Butter

Street Corn is the ultimate summer side dish. This simple recipe is a fun spin on traditional street corn and is smothered in a garlic and feta herbed butter. Add this to all of your summer picnics and it will certainly be a hit!

Ingredients

  • 8 ears of corn, husk and silks removed
  • ¼ c butter, softened
  • ½ c feta cheese crumbles
  • 1 garlic clove, minced
  • ¼ teaspoon crushed red pepper
  • 1 teaspoon freshly chopped parsley
  • sea salt, to taste
  • pepper, to taste

Instructions

  • Preheat grill to medium. Place ears of corn directly over heat and rotate a bout every 2 or 3 minutes until corn is evenly browned. Remove when all sides are evenly cooked (about 12 minutes). (If roasting, set oven to 400°F and add corn to oven either on parchment lined pan or directly on rack and roast about 25 minutes, flipping one or two times.)
  • In a small bowl, stir together butter, feta, garlic, parsley, red pepper, and a pinch of cracked pepper.
  • When corn has cooled enough to be able to touch, season with desired amount of salt and then smother those cobs with the Garlic Feta Butter and add a sprinkle of extra chopped parsley for garnish if desired. Enjoy!
