Creamy Peanut Butter and Jelly Chia Breakfast Pudding
Say good morning with this simple recipe for Creamy Peanut Butter and Jelly Chia Breakfast Pudding and start the day off right! Smooth and creamy, and will help fuel you up for whatever the day brings!
- 2 c milk of choice (dairy free will work great too!)
- 1/3 c natural peanut butter
- 1/2 c chia seeds
- 1/3 c maple syrup or liquid sweetener
- 1 tsp vanilla extract
- 1/2 c strawberry jam (or your favorite flavor!)
In a high powered blender add all ingredients except chia seeds and jam. After ingredients are added to blender, add in chia seeds--make sure you do this last and right before blending so no clumping occurs.
Blend on high until smooth and creamy. You may have to stop and scrape down the sides a couple times.
Pour into small bowls or jars and add two tablespoons of jam on top. Cover and chill for about 2-4 hours to set.
