Almond Butter Banana Breakfast Quesadillas

Ingredients

  • 1 banana
  • 4 T almond butter or nut or seed butter of choice
  • Drizzle of honey to your own liking
  • Dash of cinnamon
  • Dash of sea salt
  • 2 large whole grain or gluten free burrito sized tortillas
  • 1 T dark chocolate chips optional
  • 2 teaspoon Coconut oil

Instructions

  • Slice banana into ½ inch slices.
  • Spread 2 T almond butter over the entirety of each tortilla.
  • Add sliced bananas to ½ of each of the tortillas and add a drizzle of honey, dash of cinnamon and dash of sea salt.
  • Add chocolate chips or any other desired add ins and fold over in half.
  • In a skillet, heat about 1 teaspoon coconut oil over medium to medium high heat.
  • Add one of the quesadillas to the skillet and heat until browned, approximately 2-3 minutes.
  • Flip and heat the opposite side until browned to your liking.
  • Repeat with the other quesadilla and enjoy immediately!

Notes

Each quesadilla cuts into 3 equal pieces. 2 pieces would be a serving but if you have larger or smaller tortillas, this may change.
If you are vegan, sub maple for the honey.
