Garlic + Basil Mini Quinoa Pizzas

Ingredients

For Crust

  • 1 c quinoa uncooked (soaked in water for 8 hours and then rinsed)
  • ¼ c water
  • 2 T olive oil
  • 1 teaspoon baking powder aluminum free
  • 1 teaspoon dried basil
  • ½ teaspoon garlic powder or ½ garlic clove peeled
  • ¼ teaspoon sea salt

Toppings

  • Marinara or tomato sauce
  • Cheese of choice optional
  • Fresh Basil

Instructions

  • Preheat oven to 425°F.
  • Make sure that the quinoa has been soaked for 8 hours at least and rinsed thoroughly.
  • Add all crust ingredients to high powered blender and blend on high until smooth. It will have the consistency of pancake batter almost.
  • Take a baking sheet lined with parchment paper and spread olive oil over the paper.
  • Spoon dough onto the baking sheet to make small pizza sized circles.
  • Bake for about 8 minutes or until you can touch the top and it is firm.
  • Add pizza ingredients aside from basil and return to oven.
  • Bake for about 5-7 minutes more until the edges of the pizzas begin to brown and cheese is melted.
  • Remove from oven and sprinkle with freshly chopped basil.
  • Allow to cool for a few minutes before digging in!
