No Bake Quinoa Brownie Bites

Ingredients

  • 1 c quinoa flakes uncooked
  • 1/4 c dark chocolate chips
  • 1/4 c cacao powder more for coating, optional
  • 2 T pure maple syrup or honey more for added sweetness
  • 7 medjool dates pitted
  • 1 tsp vanilla extract
  • Dash of sea salt

Instructions

  • In a food processor, process quinoa flakes into a fine flour.
  • Add cacao and chocolate chips and pulse several times to break down chocolate chips a bit.
  • Add in all other ingredients and process until a dough starts to form.
  • Roll into bite sized balls. (if dough is still a bit sticky, chill for about 20 minutes before rolling)
  • If desired, lightly dust/roll in cacao powder.
  • Enjoy!
