No Bake Cashew Chocolate Chip Cookies

  • In a food processor, process cashews until fine.
  • Add dates, vanilla and sea salt and process until a dough starts to form.
  • Fold in chocolate chips.
  • Roll into bite sized balls and then press into cookies using a fork.
  • Chill for about 10-15 minutes to set.
  • Store in the refrigerator.

Notes

If these seem a bit dry, add another date or two or a T of water. Some dates are moister than others.
