Sweet Potato Noodles with Chopped Spinach And Thyme

  • 2 medium sweet potatoes skins removed
  • 2 c chopped spinach
  • 1-2 T olive oil
  • 1/4 c yellow onion diced
  • 1-2 garlic cloves minced
  • 1/4 c pine nuts
  • 1/4 - 1/2 tsp crushed red pepper
  • 3-4 sprigs fresh thyme
  • sea salt and pepper to taste


  • Using your spiralizer tool, spiralize the two sweet potatoes to the spaghetti like setting, set aside.
  • In a medium skillet, heat one tablespoon olive oil over medium high heat.
  • Heat garlic and onion until onion becomes soft and translucent.
  • Add in sweet potato and spinach and toss to mix together. Heat until spinach is completely wilted. (about 3-5 minutes)
  • Add in pine nuts and leaves/needles from the thyme sprigs and stir/toss to combine.
  • Add another tablespoon of olive oil if desired and serve immediately with extra thyme on top if desired.
